The quaternized wheat protein hydrolyzates have caring function as natural protein and can easily be adsorbed as quaternary ammonium salt.It can be widely used in the cosmetic.The quaternized wheat protein hydrolyzates were synthesized from raw wheat protein. The raw wheat protein was hydrolyzed by the enzymes to get the polypeptides which could dissolve in the water and had molecular weight froml500D~10000D.The polypeptides were quaternized to get the quaternized wheat protein.In order to find a suitable routine for this synthesis, various different factors were considered such as the category of catalysts, reaction temperature, reaction time,raw material mol ratio.For the hydrolyzation,three kinds of the enzymes,neutral proteinase,alkaline proteinase, trypsin were compared and got best condition for all the protease.The suitable protein hydrolyzates were got by alkaline proteinase after testing the DH and molecular weight of the protein hydrolyzates.The quaternization was divided into three steps.We discussed the best condition for all the steps.Finally,the products were tested for comparing the functions with the wheat protein hydrolyzates.
