β-carotene is not only one of the most important natural edible pigments, but also a food nutritive fortifier which has many physiological functions to person. Sinceβ-carotene is fat-soluble and does not dissolve in water and its color may be influenced under the outside environment, such as of light, heat and air, its application has been limited in liquid foods.β-carotene emulsion is a kind of O/W type emulsion. It is made inβ-carotene oily suspension and other supplementary materials such as emulsifier and antioxidant through emulsification technology. In this paper, the properties and stability ofβ-carotene emulsion were studied, and the result as follows.1. The optimum HLB value of preparation ofβ-carotene emulsion was confirmed by the method of HLB.2. The constitute of mix emulsion was confirmed.3. The optimum emulsification technology was confirmed by single factor experiment and orthogonal experiment.4. The optimum homogeneous technology was confirmed by single factor experiment and orthogonal experiment.5. The microcosmic state ofβ-carotene emulsion was observed by powerful microscope.6. The size and distribution ofβ-carotene emulsion was measured by laser granularity analytical instrument.7. The stability ofβ-carotene emulsion under different circumstance was studied according to the situation of its actual application.
