Bubble and foam are the common phenomena in our life and work. There are many manipulations in correlation with foam in industry production. For example, foam is used by people in mineral floatation to achieve enrichment and choice. But it will be harmful for the ferment process, if there is a lot of foam in the fermentation tank, so ways must be taken to defoam that.First, the reason of foam generating in aerobic bacteria ferment process due to agitation, the introduction of gas and microbe are introduced. Also the disservice for ferment due to foam in ferment process is analyzed. The defoamer and mechanisms used in defoaming with their virtues and deficiencies are introduced. A new mechanism defoaming oar with variational diameter is introduced in ferment process of industry.Foam breaker is made of taper-bores. The performance of the foam breaker is primarily correlated with the taper ratio of the taper-bore, the rotational speed of the foam breaker, the arrangement of the taper-bore in the foam breaker, and the active area operated by the foam breaker.The optimal taper of the taper-bore is found through comparing the variation of rising time of the foam, in this case the relation between the performance of the foam breaker and other elements is studied. It shows that if the rotational speed is higher the defoaming time is less, the performance of the foam breaker is better. When the average line speed and the number of the taper-bore are set, the arrangement of the taper-bores has little effect on the performance of the foam breaker. At the last of the experiment the relationship between the active area and the performance of the foam breaker is studied, when the area is increased the performance of the foam breaker can be improved little.
