Hainan province is rich in sharmp and crab. In this study, shrimp and crab shell waste as raw material of astaxanthin extraction, the residues and waste from astaxanthin extraction in the recycling of chitin oligosaccharides, calcium propionate and protein. Research the process of astaxanthin extract by subcritical fluid, chitin extraction with residues of astaxanthin extraction process, calcium propionate preparation with effluent of astaxanthin extraction process and protein extraction with effluent of astaxanthin extraction process by method of single-factor and orthogonal experiments. The result show that under the optimum condition, the extraction ratio in the subcritical fluid extraction process is 0.0373%, compared with the results of the traditional organic solvent extraction process, the extraction ratio is 33.2% higher than that of the traditional process, and the processing time is reduced by 82.8%. Under the optimid process respectively the extraction percentage of pure astaxanthin is 0.06%, the purity of astaxanthin extract is 1.83%, the yield of chitin is 22.25%, the extracted chitiirs quality indicators are meet the demands of food grade on quality index, the yield of calcium propionate is 104.4%, the purity of it is 99.4%, the yield of protein is 17.4%, product is light yellow powder, protein content 94.3%.This study has received industrial potential new species and chitin degradation conditions were studied, to provide a theoretical research base for industrialization. We collect 216 samples from tropical, marine, and mangrove environment of Hainan province. We obtain 28 chitinase-produce strains after screening, the highes chitinase activity strains was identified as a new species, named Chitiniphilus haikoumangrovensis (GenBank No. HQ877498, type strain CGMCC 1.10769). The condition of enzymatic reaction was optimumed. The optimum temperature is 50℃, pH is 7.0, in consideration of maintain the enzyme activity better, the reaction temperature is 40℃, pH is 7.0; By Ba2+, Cu2+, Fe3+, Zn2+, Fe2+, NH4+, Mg2+, Ca2+and Mn2+ on the enzyme activity of the study, did not find the metal ions can enhance the enzymatic activity. Hydrolysates mainly as a low degree of polymerization of chitin oligosaccharides and a small amount of hexosamine.
