In this paper, we mainly researched that butyric acid mono-and diglycerides can be synthesized by esterifying with phosphoric acid catalyzer, by selecting glycerol and butanoic acid as raw material, carbon tetrachloride as solvent. On the basis of physical and chemical properties of butyric acid mono-and diglycerides, the constructure, content and quality of the products were vertify by FT-IR,GC-MS. Adopting spray drying technology, made microencapsulated powder oil, using butyric acid mono-and diglycerides as emulsifier, and the products of powder oil were detected.1. Synthesis of butyric acid mono-and diglyceridesSelecting butyric acid and glycerol as reactants, phosphoric acid as catalyzer and carbon tetrachloride as solvent. After the single factor experiment, we optimized the synthesis with four factors and three levels of response surface analysis. Taking into account the convenience of the actual artificial, the best synthesis as follows:butyric acid and glycerol molar ratio is 0.81:1, reaction time 4h, with the amount of agent 81 (mL/glycerol molar), the amount of catalyst 4.5%(Percentage of total glycerol).2. The property study of butyric acid mono-and diglyceridesOn the basis of physical and chemical properties of butyric acid mono-and diglycerides, the results showed that the synthetic products had good emulsion and stability. The constructure of the products were vertified by FT-IR, they indicated that butyric acid and glycerol occurred esterification, the new ester groups and hydroxyl were made. The mass spectrogram of butyric acid mono-and diglycerides by full-mode scanning, and the NIST of butyric acid mono-and diglycerides, they were 94% similar with eath other. The systhesis products were seperated by GC-MS, the content of monobutyrin is 80%. The content of monobutyrin is 79.3% with the other method called high periodate method, the contents of the monobutyrin detected by the two methods were similar, and the high periodate method were simple, low cost, high accuracy.3. Application in powder oil microcapsules of butyric acid mono-and diglycerides Selected maltodextrin as wall material, modified starch as emulsifier, oil-soluble emulsifie were butyric acid mono-and diglycerides, when the dosage is 5 to 6%, the surface oil of microencapsulated powder oil were minimum, the embedding rate up to 97.93%. The two-phase emlsion method was determined. First modified starch was dissolved in boiling water bath, cooled to 50~60℃, then maltodextrin was added to dissolve. The oil phase emulsifier selected dissolved in 60~75℃. The temperature before homogenizing controlled in 60~75℃. Homogenization pressure is 30 MPa, with two homogeneous processes. The spray drying process parameters were determined:Inlet air temperature at 180~185℃, feeding quantity was 20.0~22.0 mL·min-1, air pressure was 0.10 MPa, the air temperature was 90~95℃, in these conditions, the embedding rate of butyric acid mono-and diglycerides powder oil were high.4. Study on the properties of butyric acid mono-and diglycerides powder oilThe physical and chemical properties of butyric acid mono-and diglycerides powder oil meet the quality of powder oil microcapsules requitments, Microorganisms meet the food hygiene requirements. At the same time the emulsion stability of recovery emulsion of the powdered oil was good, no phenomenon of particle hanging on the wall, no layer phenomenon after stewing 24h. The determination of particle size distribution of recovery emulsion liquid of new prepared powdered oil and foil packaging powdered oil indicated that recovery emulsion liquid had little change. The surface of microencapsulated oil powder were round,smooth and structure integrity, the shape were look the same through electron microscope scanning, it signified that microencapsulation efficiency of products were high, it can protect the core material in a good condition. Compared the peroxide value of raw blend oil with the powdered oil products, it showed that the peroxide value of raw blend oil rose much faster than the peroxide value of powdered oil products.
