The unique cuisine of Jinhua cakes depends on traditional prescription and handiwork. Especial it is based on the barrel charcoal oven for finishing the dryness process of the cakes. At present, many cake companies try to use the electric oven/gas stove/microwave oven instead of charcoal oven. All the methods are not effective. As we known, the traditional technics is not benefit for the traditional food-Jinhua cakes' development. Therefore the cuisine of Jinhua cakes' traditional technics need to be analyzed and researched in detail, if the companies satisfy the need of the social development, as well as keeping the cuisine. Then we could the inflection factors for the cakes' cuisine and go on the theory and practice research. This thesis would make sense for achieving great goal, which Jinhua cakes fly out Jinhua area and walk up to whole country.The electric oven/gas stove/microwave oven all belong to modern food baking equipments. The heating principles of those equipments are different from each other. When we use them to bake Jinhua cakes under the conditions of the same prescription and other technics, many indexes couldn't satisfy the traditional baking demand. So the research of starting with the traditional technics is the essential approach of breaking though the Jinhua cakes producing status quo.The infection factors of Jinhua cakes cuisine includes charcoal, water, temperature, heating, humidity and prescription and so on. According to the modern and traditional technics, the oven is the key factor. The traditional charcoal oven structure and heating material is very special. It is round and the top-bigger. The bottom is used to burning the charcoal and the inside is the cakes' baking side. When we bake the cakes, the water vapour and smoke could get out from the top. The people control the baking process by their experience, which includes through looking, smelling and tasting. This traditional method has many disadvantages. The baking time is long and the production is low. It pollutes the environment seriously. The traditional charcoal oven uses the charcoal as heating material and the baking surface is mud. Therefore the cakes have special mud, wood and fire flavour. The inside surface deposited a mass of heat through high temperature. Combining with impending surface, when the cakes are pasted onto the surface, the cake inside forms apt pressure and the cakes expanding process are easy to come true. The discover provides better theory basis for designing new pattern oven.In this thesis, a new cakes oven is designed according to the research results. The new oven should use gas-electric as the heating material. Its structure is similar to the traditional charcoal oven as possible. The baking tray need use mud tray and the tray is put inside enough acclivitous. The intelligentized temperature\time\humidity parameters are introduced and controlled accurately. The new oven which can keep the original cuisine of Jinhua cakes would be designed through the primary study soon.
