The Research On The Preparation And Processing Procedure Of GABA Instant Tea Powder

GABA has a lot of health functions such as adjust the nerve system, reducing blood pressure, anti-aging, activate the liver and kidney function. Instant tea powder has the same health function of tea leaves, it is convenient to drink and easy to combine with other plant extract. Therefore developing the safe and low cost GABA instant tea powder has significant importance to the tea processing enterprises, it also has great application values for the improving the added value of instant tea.The author described the development of processing GABA powder, discussed the premium processing method of GABA tea and done the processing procedure experiment. Experiment result is as below:(1) The vacuum treatment showed significant difference on the GABA content. The premium vacuum treatment is as below: fresh tea leave--vacuum treatment 26℃,3h--withering--vacuum treatment 26℃, 3h--GABA fresh tea leave.(2) The extraction temperature showed significant difference on the GABA content.Premium processing procedure of GABA tea powder is below:GABA fresh tea leave--rolling--extraction 60C, 30min, tea/water ratio 1:6, pH6.5-7.0--filtration (400meshes)--centrifugal evaporation 44C±0.3℃,concentration--vacuum froze drying--GABA instant tea powder.(3) The teapholyphenol and caffeine content is decreasing during the extraction process. The sensory evaluation result indicates the extraction temperature at 60C has best quality.(4) A new model for the massive production of GABA instant tea powder are formulated according to the research by the author.
