Yun-nan province is one of the main production regions of tobacco in China. Owing to the unique climate and geographical conditions, the color of tobacco produced in Yun-nan is orange, the flavor is fresh and elegant. It is the main material of fen-flavor cigarettes in China. This study was to evaluate sensory characteristic for locating the sensory characteristics of the fen-flavor cigarette in Yunnan Province.Then, the flavor compouds, polybasic and high fatty acid in cigarettes, MSS and the routine chemical compouds in the tobacco blend were quantitatively analyzed. In order to identificate the characteristic flavor components of Yun-nan fen-flavor cigarettes,the PLS analysis was made to find the correlation between the chemical composition and sensory characteristics as X matrix and Y matrix.The sensory characteristic of the cigarettes was analyzed by flavor profile analysis, and the data was analyzed by PCA. Results showed that for fen-flavor cigarettes, the acrimony was slight, the aroma of the cigarette was rich and harmonious, the smoke was strong and plump, and the physiological strength was moderate. There was something sweet and acid in its taste. And aroma of virginia tobacco, freshness, baked, sweet and fruity were very prominent in fen-flavor cigarettes, companied with some balsamic, spice and woody aroma.The flavor components were qualitatively and quantitatively analyzed by GC-MS. By PLS analysis between sixty flavor compouds and sensory characteristics, The characteristic flavor components of Yun-nan Fen-flavor cigarettes were Limonene, Furfural, Phenyl acetaldehyde, 1,3-cyclopentene-2-dione,β-Damascenone,β-Damascone, Geranylacetone,β-Ionone, 2-acetyl pyrrole, Norsolandione, Megastigmatrienone (A,B,C,D), Dihydro actinidiolide, Pentadecanoic acid and Palmitic acid. Most of them are the degrading products of carotenoid.The polybasic and high fatty acids were qualitatively and quantitatively analyzed by GC-MS. By PLS analysis between eighteen polybasic and high fatty acids and sensory characteristics, the characteristic acid components of Yunnan fen-flavor cigarettes were the polybasic acids of Oxalic acid, Malic acid, Citric acid, Azelaic acid, Malonic acid, Levulinic acid and the Saturated high fatty acids of Pentadecanoic acid, Heptadecanoic acid, Palmitic acid. However the unsaturated fatty acids have a negative impact on the quality of fen-flavor cigarettes, such as Oleic acid, Linoleic acid and Linolenic acid.The relation between the routine chemical compouds in the tobacco blend and sensory characteristics were analyzed by PLS. Results showed that TS, RS, Nic, RS-Nic ratio and Ka-Cl ratio have a positive impact on the sensory characteristics, But Potassium and Chlorine ion has a negative impact on the quality of sensory and flavor characteristics. The MSS was qualitatively and quantitatively analyzed by GC-MS. By PLS analysis between sixty mainstream smoke compouds and sensory characteristics, the characteristic smoke components of Yun-nan fen-flavor cigarettes were Pyridine, 2-methylpyridine, 3-methylpyridine, 2-ethylpyridine, 3-ethylpyridine, 2,3-Bipyridine, 1,3-cyclopentene-2-one, 2-methyl cyclopentenone, 2,3-dimethyl cyclopentenone, Furfural, 5-methyl furfural, Acetic acid, Phenyl acetic acid, Palmitic acid, paraethyl phenol, Solanone, Neophytadiene and Megastigmatrienone C, Which Mainly Include pyridine , cyclopentene-2-one compouds, MPRs, Acidic components and some precursors of aroma. All of them have important influences to the formation of the Fen-flavor style in Yunnan cigarettes.
