Glycerol Monolaurate (GML) naturally exists in breast milk, it has good emulsification and antimicrobial properties simultaneously. However, the water unsoluble and unpleasant taste properties of GML restrict its application in food industry. The microencapsulated GML with micro capsule technology can not only can maintain the functional property of GML, but also improve its fluidity, water solubility and taste, that can expand its application in food industry.The wall materials were selected according to the results of encapsulation as following:starch sodium octenyl succinate (SSOS) and maltodextrane (MD) were used as wall materials, sucrose ester (SE) was emulsifier. The microencapsulated GML was obtained by spray drying process. The result of the orthogenesis test of optimizing compose based on the single factor experiment showed that the optimum formulation of the microencapsulated GML was as follow:the ratio of SSOS to MD is 23(w/w), the ratio of core to wall is 2:7(w/w), the content of emulsifier is 1%, the total solid concentration of the emulsion is 32%. The optimum homogenizing pressure and spray drying technological parameters were confirmed as follows:homogenizing pressure is 35MPa, feed temperature is 55℃, feeding rate is 30mL/min, inlet temperature is 165℃.The microencapsulated GML is of milky white color, showed good fluidity and solubility, the microencapsulation efficiency was 77.69%, the moisture content was 3.41%, the average particle size was 6.670μm The particles were irregular ball under electron microscope, and the glass transition temperature (Tg) was 39.0℃which indicated that the microencapsulated GML has good stability on the room temperature. The result of organoleptic test of the baby formula and nutrition rice meal added microencapsulated GML and GML respectively showed that, the threshold of the microencapsulated GML (0.41% and 1.2%, respectively) were higher than that of GML(0.037% and 0.14%,). The results of the inhibitory effects against Escherichia coli and staphylococcus aureus were as follows:the antibacterial ability of GML was affected by the encapsulation, the greater the concentration of GML, the less the influence.
