This study is guided by food immunology theory, use modern food immunology technology and processing technology, study of rice bran sterol antibacterial activity in vitro and enhancement of immunity. We determine the best ultrasound emulsification process of Twain80and DMSO by orthogonal method, and prepared stable performance of rice bran sterol emulsifier.Use minimum inhibitory concentration and susceptibility disk diffusion method, determinate the minimum inhibitory concentration (MIC) of rice bran sterols on E. coli, Pasteurella, Salmonella, and Staphylococcus aureus, the minimum bactericidal concentration (MBC) and the inhibition zone diameter. The minimum inhibitory concentration of rice bran sterol to E. coli, Pasteurella multocida, Staphylococcus aureus and Salmonella were0.025mg/mL, the minimum inhibitory concentration of Salmonella was0.1mg/mL. The minimum bactericidal concentration of rice bran sterol to E. coli, Pasteurella multocida, Staphylococcus aureus and Salmonella were0.1mg/mL. the minimum bactericidal concentration of Salmonella was0.4mg/mL. The best inhibitory concentration to E. coli, Pasteurella multocida, Staphylococcus aureus and Salmonella were0.8mg/mL,0.4mg/mL,0.4mg/mL and3.2mg/mL. The maximum diameter of the zone of inhibition were13.7±0.7mm,18.0±0.8mm,21.0±1.2mm,15.6±0.5mm. The results show that, rice bran sterol has good antibacterial effect in vitro.SD rat continuous gastric lavage for15days, according to food immunology indexes, determinate BW ratio, carbon clearance, macrophage function, serum hemolysin, delayed hypersensitivity and lymphocyte proliferation ability. Compared with the control group, rice bran sterol can improve the liver coefficient by all concentration level (P<0.05or P<0.01), each dose group of spleen and thymus index was no difference. In addition, it also can enhance rat macrophage's phagocytosis, the carbon clearance index and proliferation of lymphocyte. Low and middle dose of rice bran sterol can significantly increase the release of serum hemolysin (P<0.05), and can significantly delayed hypersensitivity in rats (P<0.01). The experimental results show that, plant sterols have certain enhancing immune function.
