Based on glucosamine monomer, have obtained different glucosamine maillard reaction products (G-MRPs) through the reaction conditions of different preparation. The determination of glucomannan, different glucosamine maillard reaction products in vitro removed DPPH free radicals, hydroxyl radicals and the reduction ability were carried out. According to the result of in vitro antioxidant,have chosen two kinds of best glucosamine maillard reaction products with antioxidative effect in vitro, which are M-60and M-120. And the preparation conditions were optimized. The determination of glucosamine, M-60, M-120on subacute aging model mice antioxidant was carried out. By MTT method, studied the three samples of two kinds of stomach cancer cell proliferation of AGS, MGC growth depression and how the three samples of e.coli, staphylococcus aureus, bacillus subtilis inhibit the growth situation was also studied.Using the infrared, ultraviolet, fluorescence spectrum analyzer, analyzes maillard reaction products of glucosamine in different conditions material component.The analysis shows that, with the reaction temperature and reaction time increased, G-MRPs’s ultraviolet absorption value in203and274nm and the fluorescence value increased. Reaction products infrared spectra of the show, with the reaction time longer and temperature increasing, the relative quantity of the reaction products of each functional groups was reduced. The experiment confirmed that the samples at reaction temperature115℃, reaction time90min as well as the ones at reaction time10min, at reaction temperature65℃has good oxidation stability in vitro.On glucosamine, M-60, M-120three samples in the rats of the antioxidant experimental results show that the three samples of high dose450mg/kg. d, the function of mouse to D-galacitiol cause subacute aging has the very good resistance effects, the experimental group and blank compared with good enzyme live, as well as lower MDA content.Glucosamine, M-60on escherichia coli, staphylococcus aureus, bacillus subtilis has certain inhibition effect, but M-120is lack of inhibition to these three kinds of bacteria.Three samples against stomach cancer cells AGS, MGC proliferation are certain inhibition effect. In high doses500μg/mL, the function of glucosamine, M-60, M-120of AGS, the inhibition rate were45.13%,45.11%,44.45%and respectively, the inhibition rate MGC reached39.58%,41.78%and34.97%.
