The perilla is one of the kinds of traditional chinese medicine that was fistly seenas both food and drugs by the ministry of Heath.The perilla was divided into medicalone and oiled one. In the oiled one, the oil yield is about50%-66%and the proteinyield is about32%. The perilla oil has the most α-Linolenic Acid in all vegetable oiland claimed “deep sea fish oil in plant”, addition to food, as the material of anti-cancerand anti-allergy food; The perilla protein has more Glutamate, Arginine, Lysine thanother oil protein and is an ideal plant protein sources.Combining with the processingcondition of the aqueous enzymatic technology moderate and protein recovery,moreoil recovery and so on.Study on the aqueous enzymatic technology for the perilla hasan important role in the utilizationof Perilla sources and the exploitation of newproducts.Through the texperiment,the Northeast perilla seed was selected for the testexamination materal.The perilla has a wide extent of cultivation in our country.Theingredients of perilla seed in different regions aren’t same. Northeast perilla seed wasselected for the different ingredients of perilla seed in different regions and the trait ofAqueous enzymatic oil extraction.Design a line for aqueous enzymatic extraction technology suitable for perillaseed was developed.Perilla seed was ground and then add to a certain percentage ofwater.After mixed,treated with the enzyme at the optimum temperature and pH forsome time and then heated at80℃for10min in order to reach enzymeinactivation.Then the mixture was centifuged at4000r/min for15min and separatedinto free oil-Ⅰ, emulsion,hydrolysates solution and solid phase.The emulsion wasdemulcificated by freeing.Then free oil-Ⅱand solid were obtained. The proteinhydrolysates was obtained by freeze-drying of the Hydrolysate solution.Detection the consequent of Ultrasonic pretreatment technology for the extractionof the perilla seed in the aqueous enzymatic extraction was obtained. It wasn’t ideal from the effect of Ultrasonic power, time, the perilla seed oil extraction yield.Above the texperiment, The Alcalase was selected for the extraction of the perillaseed by the aqueous enzymatic extraction. At the same time, the optimal processingcondition of seeds/water ratio suitable for the extration of the perilla seed by theaqueous enzymaticextraction was1:4.The optimum conditions defined for theenzymatic processing on the basis of one-factor-at-a-time experiments and theoptimization experiments were: enzyme concentration1.5%, extraction pH89.4,extraction temperature61.3℃and extraction time4.47h.The perilla seed oil extractionyield was85.67%and the protein hydrolysate extraction yield was73.36%.
