This paper aims to study preparation of the refine technology of marine fish oil, basefrom enzyme technology and the modern industrial refine technology of marine fish oilindustrialization.by enzyme technology and pretreatment of fish oil,esterification,moleculardistillation,refine etc,and enrichment and purify of the ω-3polyunsaturated fattyacids(PUFA),more as eicosapentaenoic acid(EPA) and docosahexaenoic acid(DHA),andindustrialization of sea fish oil. Being the main ocean resouces,fish oil can be takeadvantage of high value from low value by high-technology, and develop from feed tofood,health care product and drug,so to reach the aim of industrialization of marine fish oil.By enzymatic technology,with refine fish oil in packed bad enzyme reactor,usingLipozyme RM IM was catalyzed alcoholysis reaction by fish oil and alcohol.study the ratioof oil/alcohol,quantity of enzyme witch affect the alcoholysis reaction to enrich EPA andDHA. On the optimized condition, reaction enrich the content of EPA and DHA from30.4%reached to54.3%,yield was not below75%.and by molecular distillation,got thetriacylglycerol products rich in EPA and DHA.By the modern industrial refine technology of sea fish oil,such as pretreatment of fishoil,including of deacidification, degumming,decoloration,etc, to improve the quality of fishoil before esterification,and ethyl esterification is catalyzed by alkali,molecular distillationin high vaccum((-1kg/cm), and urea complexation,to enrich and purify of eicosapentaenoicacid(EPA) and docosahexaenoic acid(DHA), and by deodorization and refine fish oil toreach more better quality. And in the esterification of fish oil,we set the system ofrecycle of alcohol, this is new technology which is different from traditional processsingcraft.and this technology will save more food grade absolute alcohol,and this technologywill reduce the energy consumption,will be more important to develop circulationeconomy.Finally, this paper present more effective manage and monitoring method to reach theaim of food safety.First we set up HACCP(hazard analysis and critical control point) planto control the quality management of marine fish oil refine processing, and second we referto product standard of China and the international, monitor the quality safety of product, toinsure the food safty in the industrialization of refine technology of marine fish oil.
