In this paper, synthesis of enzyme-catalysed and properties of alkyl polyglycoside were shown is follows:1. Enzyme was extracted from malt, and the influence factors of enzyme activity were iiscussed, the conclusions were as follows:the enzyme activity was the highest when the length of:he malt was0.5cm; the best ratio of material to water for extracting enzyme was1:8at54℃.2. Enzymatic synthesis of alkyl polyglucoside via reversed hydrolysis reaction was carried out using enzyme from malt, glucose and octanol were reaction raw materials. The process conditions were optimized by orthogonal expts and from the analysis of variance we could come to a conclusion, the optimum temperature was50℃, the reaction time was36h, the water addition amount was4mL and the optimum addition of malt was3g. In the optimal process conditions, the conversion rate of glucose was33.8%. The structure of APG was analyzed by means of infrared ibsorption spectroscopy, recording the characteristic absorption skeleton vibration peaks C-O-C1639cm-1), and the stretching vibration peaks C-0and C-O-C (1145cm-1). The spectrum proved the structure of APG.3. Enzymatic synthesis of alkyl polyglucoside via reversed hydrolysis reaction was carried out using enzyme from malt, starch and octanol were reaction raw materials. In the process of catalytic ydrolysis of starch, octanol was glycosyl receptor which competition with water to synthesize alkyl polyglucoside. Single-factor was employed to confirmed the influences of reaction time,accession amounts of water, malt and octanol on conversion rate; results demonstrated the following optimum conditions for high conversion rate:the scale of cornstarch was1g, the reaction time was48h,the volume of water was15mL, the scale of malt was3g, the volume of octyl alcohol was10mL, the eaction temperature was50℃,; under such conditions, the conversion rate was8.2%. The structure of APG was analyzed by means of infrared absorption spectroscopy, recording the characteristic bsorption skeleton vibration peaks C-O-C (1641cm-1), and the stretching vibration peaks C-0and C-O-C (1148cm-1). The spectrum proved the structure of APG.4.The properties of APG such as surface tension, critical micelle concentration, emulsification capability, foaming force and the stability of foam were studied in this paper, the conclusions were as bllows:(1) the Surface property of synthesized APG was as excellent as merchandise APG, its critical micelle concentration was1g/L and the surface tension was31.856mN/m;(2) compared with nerchandise APG and LAS, the emulsification capability of synthesized APG was poor;(3) compared with merchandise APG and LAS, the foaming force of synthesized APG was poor, but compared with LAS, its foam stability was excellent.Figure:[17]; Table:[25]; References:[60].
