In our country sunflower which the oil content of Sunflower seed kernels is morethan40%and protein content is in20%above, is one of the traditional oil crops. Thetraditional technology of extraction oil can not be the comprehensive utilization of thetwo things (oil and protein). With the sunflower seed as the material, this research picksup the oil in sunflower seed with enzymatic hydrolysis method, and discusses thecondition of pretreatment and hydrolysis of material. The paper also do purification onthe hydrolyzate with membrane technology, and explore the ingredient of polypeptidedrinks with sensory experiment to give some theories and application basis on theintegrated utilization of oil and protein.1. Confirm of the pretreatment experimental conditions of sunflower seed. Take theextraction ratio of free oil and protein as the complete index, and do factor experimentabout the time and temperature of drying and denaturing. The result of the experimentshow that, pretreatment has a great effect on the extraction ratio of free oil and protein.The decided experimental condition is,24h and65℃of drying,100℃and60min ofdenaturing.2. Confirm of the experimental condition of extract sunflower seed oil byenzymatic hydrolysis method. The study take the extraction ratio of free oil and proteinas the complete index. During the research, do hydrolysis on the liquor of sunflowerafter the pretreatment. First confirm the best enzyme is the neutral protease among otherenzyme as alkaline protease, papain protease, neutral protease and cellulose. Then dosingle factor experiment on the usage of enzyme, the pH, the time of hydrolysis andratio of feed liquid, and get the best experiment condition with orthogonal test. Theresult is pH5.5,4h of hydrolysis,1.2%of hydrolysis, and with rate of reed liquid as1:7.With the second experiment, it comes that the average value of the extraction ratio offree oil is81.25%and79.15%for protein. With HPLC(High Performance LiquidChromatography) detection it comes that the peptide molecular weight in hydrolysisliquid is less than2000Dal, with85%. Oil from the experiment is clear and transparent,with yellow color and smell of sunflower seed, whose typical properties is1.36mgKOH/g of acid value,3.65mmol/kg of peroxide and0.08%of water.3. The confirm of beverage production process. First do activated carbon andmembrane processing on the hydrolysis under the best experiment condition, make surethat the best dosage of activated carbon is one percent and the best membrane is N30,the molecular weight of350~1500Dal in the liquid is90%. Then do drinks allocateexperiment on the filtrate membrane, which including①single factor and orthogonaltest on the additive amount of the glucose, malic acid, cider and honey, which gives outthat the best experiment condition is4.5%glucose,0.3%malic acid,2.0%cider and2.5%honey.②the additive amount test of yellow former glue, make sure that the drinkis most wonderful when the adding amount is1.2%according to the precipitationexhalation.③test to confirm the sterilization temperature, and make sure that the sterilization temperature is110℃according to the precipitation and color of the drink.The sunflower seeds peptide drink is green, with moderate sweetness, smooth taste andthe taste of apples.
