Fast determination of total sugar and citrid acid is built in this study,and this fastdetermination is used in the femantation of ctrid acid.By camparing the existing methods for the determination of total sugar, to build anew method for the determination of total sugar. The fast determination is built on thebasis of the complementary color and titration. In this part, the hydrolysis offermentation liquor is analysised, to choose the most appropriate hydrolysis conditions.The final condition of the fermentation liquor hydrolysis is, sulfuric acid concentrationis1.0mol/L, the added amount of sulfuric acid and fermentation liquor is4:1,thehydrolysis temperature is100℃, the time is4min. Then comparing the traditionalmethods of total sugar, analyzing the superiority of each method, the rapid andeffective method for the determination of total sugar is built, the total sugar analyzer.By comparing the total sugar analyzer method with other methods, the standard deviationis0.3045and the coefficient of variation is0.0352, the test shows that the total sugaranalyzer method is efficient.Comparing the different determination methods of citric acid, to build a newdetermination mothod of citric acid. The fast determination method of Citric acid, isalso built on the basis of complementary color and titration, at the same time, improvethe reagent, the fast determine of citric acid is built. In this part the main task is toestabilish the citric acid analyzer, and chose the titration indicator, through the trialcomparing, Thymol blue is an ideal indicator. Comparing citric acid analyzer methodwith other methods, citric acid analyzer mothod has big advantages, the standard deviationis0.0252and the recovery rate is98.52%,the determination time of citric acid is in1min to2min, this method is not only fast, but accurate.Aspergillus strains(AsPerglllu, nlger),producing citric acid, preserved in laboratory,is activated, then shakes to get liquid seeds, the liquid seeds is added to10Lfermentation tank in citric acid fermentation. The total sugar analyzer and citric acidanalyzer are applied in the fermentation process of citric acid to test, analyzing the datafrom the test, to control the process of citric acid fermentation in order to achieve theoptimal station.
