| Studies were carried out to assess the correlation of Brabender Viscograph-E and RapidVisco Analyser (RVA) on pasting viscosity properties of wheat flour. Sixteen wheat sampleswere selected and milled to flour with an experimental mill. Ten different commercial floursamples and forty-six different system flour samples were also chosen in this study. Thephysicochemical index and gelatinization property of these samples were analyzed byBrabender Viscosity-E and Rapid Visco Analyser (RVA-4). The correlations of the pastingviscosity properties measured by these two instruments were studied. The relationship of thetwo viscosity units between Brabender Viscograph and RVA were also analyzed.The results showed that the peak viscosity of different types of wheat flour from high tolow respectively was weak gluten, reinforced gluten, strong gluten and sprout seriously wheatflour. The peak viscosity of different types commercial powder from high to low respectivelywas pastry flour, noodles flour and steamed bread flour. Gelatinization viscosity properties ofwheat flour from different systems were different, the peak viscosity of the wheat flour in theformer Heart grinding, Slag grinding and Resieve system were much higher, the secondleather flour in the Leather grinding was the highest. Wet gluten and damage starch of flourhave significant negative correlation with the parameters of RVA, but have certain positivecorrelation with the Falling Number.Peak viscosities detected by Viscograph and RVA were highly related, and thecorrelation coefficient reached0.9706. The pasting temperature detected by these twoviscometers is slightly related (correlation coefficient was0.4346).Analysis the correlation between two viscosity units (BU and mPa·s), the correlation ofpeak viscosity between these two units were: BU=9.6882RVU-592.33; the correlation ofultimately constant temperature period and end viscosity between units were:BU=10.057RVU-1054.4. Using RVU and BU to make a correlation analysis of peakviscosity and final viscosity, received the correlation were: BU=8.6837RVU-560.21,correlation coefficient was0.8436, which shown highly positive correlation. |
