In this paper, the beer label adhesives of modificated protein, in the method of themicrowave modification and N-dodecyl mercaptan(NDM)modification, was made from threemain vegetable protein(soybean protein, peanut protein and wheat protein). Then, the bestconditions of the beer label adhesives of modificated protein were worked out on the basis ofsingle factor experiment. Under the condition of microwave modification, the best conditionfor soybean protein label adhesives was:80℃,1:9ratio of solid to liquid,500W microwavepower,35-minite treatment time;the best condition for peanut protein label adhesives was:80℃,1:4ratio of solid to liquid,600W microwave power,50-minite treatment time;the bestcondition for wheat protein label adhesives was:80℃,1:4.5ratio of solid to liquid,600Wmicrowave power,90-minite treatment time. Under the condition of NDM modification, thebest condition for soybean protein label adhesives was:70℃,1:8ratio of solid to liquid,NDM dosage0.06mL,40-minite treatment time;the best condition for peanut protein labeladhesives was:90℃,1:4.5ratio of solid to liquid, NDM dosage1.2mL,100-minitetreatment time;the best condition for wheat protein label adhesives was:85℃,1:5ratio ofsolid to liquid, NDM dosage0.6mL,80minite treatment time.In this project, taking the poor workability and dispersibility of the label adhesives ofmodificated wheat protein in cosideration, the wheat albume power which had beendegradated by α-amylase was dried and modificated by NDM and the best condition for theviscosity of label adhesive was:85℃,1:2.5ratio of solid to liquid,3ML NDM dosage,110minite treatment time, pH7.0. But because its cohesive strength and water resistanceperformance is too poor, it can not be used as the beer label adhesives any more.From the comparision between microwave modification and NDM modificatiion, it wasfound that the usability of NDM modification was better than microwavemodification.Among the three modificated protein label adhesives, soybean protein labeladhesives was the best, then the peanut protein label adhesives. the poorest was wheat proteinlabel adhesives. however, the three modificated protein label adhesives were applied to beerlabel adhesives.
