With the acceleraced pace of our life, especially in recent years, food safety accidents occur frequently, safety of synthetic pigments and their own health are more and more attentioned.Therefore, the study of natural pigments with health care function to become hot. Anthocyanins as a wide range of phenolic compounds present in higher plants.In nature, they can show different colour and it is safety to human body, so it is a promising natural pigment instead of synthetic pigment. Anthocyanins also have a variety of biological activity, such as antioxidant, anti-inflammatory function, lowering blood pressure and other effects, anthocyanins can be used as the basic raw material of functional foods. Black sunflower seeds are very rich resources in China, especially in the Northeast region.Currently, with the development of food industry, the expansion of production, processing and production of sunflower seed shell waste is also increasing. This subject as raw materials, the use of the rich black sunflower seed resources in Jilin Province, the development of anthocyanin substances has far-reaching significance. In this paper, black sunflower seed shell extraction process of anthocyanin substances were optimized in previous studies on the basis of the group,so that the extraction rate has been greatly improved, and the first to determine the black sunflower seed shells on the otherthe chemical structure of an anthocyanin monomer peony-3-glucoside. The detailed contents are as follows:1) Extraction of anthocyanins in Black sunflower seed shellsIn this paper, two extraction methods solvent extraction and ultrasonic extraction were compared, results showed that the traditional solvent extraction of anthocyanins in the black sunflower seed shell extract the best results.In the single-factor test based on the response surface analysis software using the experimental conditions were optimized to get the best extraction parameters:extraction temperature50℃, extraction time2h, solid-liquid ratio1:23, by response surface optimization software the black sunflower seed shells of anthocyanin yield increased to6.12%,and the extraction rate was increased by12.25%.2) Isolation and purification of anthocyanins in Black sunflower seed shellsUsing AB-8macroporous resin black sunflower anthocyanins were purified, and its adsorption on the resin with the resolution and dynamic adsorption and resolve to do the research, results showed that the anthocyanins in black sunflower seed shells AB-8macroporous resin adsorption on better parsing speed quickly. This article also uses paper chromatography of anthocyanins in the black sunflower seed shells were isolated, experimental results show that the BAW is the best the agent, by expanding the circumstances to determine the black sunflower seed shell contains two kinds of monomer anthocyanins.3) Structural analysis of anthocyanins in Black sunflower seed shellIR, UV and ultra-high performance liquid chromatography tandem quadrupole mass spectrometry are used for the analysis of anthocyanins in black sunflower shell, the results show that the two kinds of monomer anthocyanins were cyanidin-3-glucoside and peony-3-glucoside.4) Antioxidant research of anthocyanin in Black sunflower seed shellsIn this study, total antioxidant capacity (T-AOC) assay kit for black sunflower seed shells in anthocyanins antioxidant were tested, the test results show that the anthocyanins of black sunflower seed shells have significant antioxidant capacity, the antioxidant capacity of3.13units/mg, indicating that the black sunflower seed shells anthocyanins can serve as an excellent natural antioxidant used in foods.
