Grape seed is a byproduct which is full of grape seed oil, protein, proanthocyanidins, resveratrol, tannins and other substances in grape production process, and all the substances have high nutritional value and health function. In this paper, extraction method and function of the grape seed oil, protein, procyanidins, and other substances of active ingredients are introduced, and the respectively extracting. under solvent dip reference extraction grape seed oil, used single factors test research grain of, and moisture, and dip to solvent, and dip to time, and dip to temperature, and material liquid than on grape seed oil received rate of effect, with orthogonal test determines grape seed oil of best extraction conditions for material grain of60accounts, material moisture7%, dip to time3h, dip to temperature65℃, material liquid than1:6. Under the conditions of extraction of grape seed oil, with a yield of9.89%. And undertake a study on the finishing process. Based on the extraction of alkali-soluble protein from grape seeds, use of single factor experimental study on alkali extraction time, temperature, concentration, extract liquid ratio on yield effect of grape seed protein, determination of optimum extraction of protein from grape seed by orthogonal test conditions for the lye concentration1×10-4mol/L, extraction time40min, extraction temperature40℃, feed better than1:20. Under the conditions of extraction of grape seed protein, with a yield of49.22%. Under solvent dip reference extraction grape seed original anthocyanins, used single factors test research extraction solvent type, and ethanol concentration, and extraction temperature, extraction time, extraction number, material liquid than, grain of, acetate acidification on grape seed original anthocyanins received rate of effect, with orthogonal test determines grape seed original anthocyanins of best extraction conditions for ethanol concentration70%, extraction temperature50℃, extraction time60min, material liquid than1:8. Under the conditions of extraction of proanthocyanidin from grape seed, with a yield of94.22%.
