| The refreshing effect of four natural antistaling agents on cold fresh chicken treatmeat were compared. The relationship between the muscle water holding capacity and properties of Antibacteria films in duration of storage was studied. The mechanism of potassium sorbate release from chitosan films by Mathematical methods was investigated. The diffusion coefficient was calculated and the type of diffusion mechanism was defined. Two orthogonal experiment designs was adopted to obtain the optimized composite of preservative.(1) Comparative test of cold fresh chicken treated by chitosanThrough the test of colony form units, TVB-N, pH and TBA value during storage, The refreshing effect of four natural antistaling agents of Chitosan, Natamycin, ε-polylysine and Nisin on cold fresh chicken treatmeat were compared. The shelf-life of cold fresh chicken treated by chitason can be extend to7-10days while the other group only7-8days.(2) Muscle water holding capacity test of cold fresh chicken treated by chitosanThe muscle water holding capacity of three chitosan films were compared and purge loss and prcooling loss were tested. The result shows that the1.0%group has the best muscle water holding capacity. The purge loss and prcooling loss were lower than other groups. The purge loss was3.57%on the fifteenth day.(3) Analysis and modeling of potassium sorbate diffusion through chitosan filmsPotassium sorbate and chitosan can be made into an excellent antibacterial property films. The relationship between diffusion coefficient and antibacterial property was the smaller is better.The result showed that, the diffusion coefficient D decreases from3.07×10-12m2/s to2.07×10-12m2/s with the increase of chitosan concentration when the initial concentration of potassium sorbate was constant. The diffusion coefficient D increases from0.89×10-12m2/s to5.84×10-12m2/s with the increase of potassium sorbate concentration when the concentration of chitosan was constant. The mechanisms of potassium sorbate diffusion through chitosan films were mainly Fickian.(4) Optimization of complex test of chitosan and other natural antistaling agentsThe first orthogonal experiment design was adopted to study fresh-keeping of poultry by using chitosan, lysozyme, propolis and pomegranate polyphenol as preservative.The results showed that the optimized composite of preservative is0.5%chitosan,0.15% lysozyme,0.6%propolis,0.05%pomegranate polyphenol. Three spice extracts were picked by inhibitory rate. The second sombination grouping composed of0.5g/ml cloves extract,1.5%chitosan,1.0g/ml Chinese goldthread extract,0.5g/ml Litsea cubeba extract. Both Combination groups can extend the shelf-life12-15days than non-treated group of4-5d. |
