Colostrum is rich in natural active substance such as immunoglobulin, lactoferrin and growth factor, which enjoys a wide application in the food industry. In the experiment, colostrum is first processed by the high pressure technology, then fermented by lactic acid bacteria to obtain the active substance containing yogurt and finally from whcih we produce yoghurt powder by spray drying technology for ease of storage and transportation., the findings of the trial are as follows:(1)Bifidobacterium bifidum domesticated by the thermal death treatment in20%reconstituted milk,the number of viable cells is55times to the control group; the number of viable cells is300times the control group in TPYG with the same treatment as above. After the spray drying process, the retention rate of Bifidobacterium bifidum domesticated in the reconstituted milk to reach32%(1.35×108cfu/g) without acclimation to6.5%(2.74X107cfu/g)(2) The optimal parameters of the lactic acid fermentation of bovine colostrum determined by orthogonal test:bacteria ratio (Lactohacillus bulgaricus:Bifidohucrerium bifidum: Streptococcus thermophilus) is2:2:3, the strain of adding5%, incubation time8h, fermentation temperature42℃. At this point the number of viable cells in the fermentation Colostrum can be reached to6.22×108cfu/mL.(3) The optimal parameters of spray drying:the outlet air temperature is70C. the solids content of40%, feed flow4ml/min. into the wind capacity of40m3/h, viable cells in the sour milk was5.19>×108cfu/g. and the water content is3.86%.IgG retention is84.6%.
