Mung bean is a medicinal food and medicine of grain. It has effectiveness of clear heat cultivated and detoxification. The skin of mung bean is widely used for the process of cosmetic and health care food. A lot of research reports that there is no synthetic color can provide nutrients to the human body. Some synthetic colors are harmful to people health as to make the fertility down and drop the birth deformities, and so on. The natural pigments generally come from natural ingredients, such as beets, grapes and chili. These foods are obtained and accepted by the vast majority of consumers. The food is not only safe to use but also can get more favor of consumer as the sources of natural pigments. Make the mung bean skin and mung bean skin dregs as the research object. Do the extraction of the edible pigment from mung bean skin and the extraction of the dietary fiber from the mung bean skin dregs.The method was used to extract pigment and dietary fiber from mung bean skin and skin dregs, and then the orthogonal test and response surface method were adopted to optimize extraction technology.In this experiment the process of green pigment extraction is explored. The green pigment of mung bean was extracted by ultra sonic wave and extraction, based on the orthogonal result of test.The best method of alcohol extraction were obtained, namely extracted for2h by using85%ethanol solution at80℃with the material ratio of1:25(g/ml).Still studied the influence of the metals ion upon the mung bean skin. The extraction rate of pigment is92.6%.Based on single experiments, ratio of solid to liquid, ultrasonic power and ultrasonic time were selected for Box-Behnken center composite designing. RSM was employed to study the effect of these factions on the yield of green pigment. The results indicated that the optimal process conditions were ratio of solid to liquid1:20g/mL, ultrasonic power600W, ultrasonic time21minites,ethanol concentration70%.The extraction rate of pigment is94.2%.Based on single experiments, ratio of solid to liquid, Extraction temperature and sodium hydroxide were selected for Box-Behnken center composite designing. RSM was employed to study the effect of these factions on the yield of dietary fiber. The extraction technology for dietary fiber from mung bean skin was:2mol/L, extracting temperature of55℃, ratio of solid to liquid1:45g/mL, extracting time of8h.Under these conditions, the extraction rate of dietary fiber reached67.8%.
