The present study was to take Lingwu long jujube as the test materials. The effects of maturity, storage temperature and storage time on reactive substances and total antioxidant capacity (T-AOC) of jujube were studied. The research had investigated the extraction technologies of triterpenoid saponins, polysaccharide and cAMP from Lingwu long jujube.To extract the polysaccharide in jujube, and to study on the activity of the exterior of jujube in clearance of free radical, so as to provide scientific basis for selecting antioxidant. In this article using the orthogonal design to extract polysaccharide of jujube. The optimized process was as follows:the concentration of cellulose was0.5%, pH value was5.5, solid-liquid ratio was1:30, the extraction temperature was55℃, extraction time was1.5hours and2times. In optimal conditions, the yield of polysaccharide of jujube extracted by cellulose was9.7%. The free radical clearing capacity of polysaccharide was studied by colorimentry method. The results showed that the jujube polysaccharide had the ability to scavenge hydroxyl radicals and superoxide anion radicals, which had the dose-effect relationship with the concentration of polysaccharide that were0.06mg/mL and0.31mg/mL respectively when scavenging50%of hydroxyl radicals and superoxide anion radicals.The extraction of triterpenoids and cAMP from the jujube by ultrasonic wave technology were explored. In the experiment, response surface analysis were applied in the extraction. The optimal range of key factors was carefully studied, by regression analysis, the optimum condition for extration of triterpenoids was achieved and shown as follows: extraction temperature was65℃, ratio of material and liquid was1:28, ethanol concentration was80%, extraction time was22minutes, extrated2times. By optimum conditions, the extraction yield of triterpenoids was0.346mg/g. The content of cAMP was analyzed by HPLC method. And the optimum condition for extration of cAMP was shown as follows:pH of solvent was5.5, extraction time was27minutes, extraction temperature was68℃, ratio of material and liquor was1:32, the extraction ratio was0.346mg/g.In addition, this study also studied the changes of active substances within the jujube and the total antioxidant capacity of jujube during storage under0℃and20℃...
