The nutritional function of rapeseed oil’s appropriate is with a high content of unsaturated fatty acid. So, for the functional perspective, we should improve the content of unsaturated fatty acid, such as oleic acid and linoleic acid, should lower the content of saturated fatty acid. However, the polyunsaturated fatty acid, such as linoleic acid and linolenic acid have a high nutritional value. Due to the ease of oxidation shortcomings, rapeseed oil has no advantage in preservation.We want to improve the content of monounsaturated fatty acid such as oleic acid, lower the content of linoleic acid and linolenic acid to improve the quality of rapeseed oil. This research chooses high oil-content lines and low oil-content lines of Brassica napus as the experimental material. And take study on material dynamic change of rapeseed which in development, oleate desaturase activity and the correlation coefficient between oleate desaturase activity and oleic acid-content. The Results:1. The content of oil in rapeseed were both in time dependent manner.2. The content of chlorophyll reached to maximum in period of33days after the flowers blooming, and then fell down rapidly. In this process, the average chlorophyll contents in developing rapeseed of high oil-content lines were higher than low oil-content lines.3. The content of protein of rapeseed were both in time dependent manner.4. The seed weight of high oil-content lines was higher than the low oil-content lines in the same period.5. The content of microsomes protein in developing seeds of high oil-content lines were higher than low oil-content lines.6. The oleate desaturase activity of high oil-content lines were lower than low oil-content lines. Correlation between oleate desaturase activity and oleic acid content is significantly negative...
