The resveratrol can be found in peanuts、grapes、polygonum cuspidatum and other plants,with the role of antioxidant, eliminating free radicals,anti-bacterial and anti-fungal,and cardiovascular protection. The resveratrol in experiments was provided by the College of Pharmacy, Southwest Universersity.The change of resveratrol powder for 0 day、5 days、10 days in the conditions of high temperature, high humidity,high light has detected by HPLC,while designing the effect of sunlight,temperature,acid,alkali,oxidizing agents and pH on the stability of resveratrol.The results show that resveratrol powder under high temperature and high humidty is stable,is instable in high light.The content of resveratrol decreased significantly when it was in sunlight for one hour; the content declined while resveratrol was put in 60℃.The solution of resveratrol shows the instability in sunlinght and high temperature.The solution of resveratrol is instable in acid,alkali, oxidizing agents.When pH is 4 to 7,resveratrol solution is stable;when pH>8、9,the stability of resveratrol is poor.With the extension of action time,trans-resveratrol is converted into cis-resveratrol. Melting point of the resveratrol powder and 3,4’,5-acetylated resveratrol powder is 248.8-250.4℃and 112.8-114.3℃by using melting point apparatus.T2 toxin is the most toxic chemical compound in class A single-ended mortierella olefinic toxin,which exist in the contaminated crops such as corn,wheat and have great harm to human and animals.To study the toxic effect of T2 toxin on cells, HepG2 cells is the research object of the experiment,the different final concentration of T2 toxin have affected cells for different time(24h,48h).HepG2 cells viability decreased with the rise of final concentration and treatment time of T2 toxin.When the combined effects of T2 toxin with resveratrol and acetylated derivatives on HepG2 cells,the OD value of the combined group is higher than that of T2 toxin group,suggesting resveratrol and acetylated derivatives can protect HepG2 cells from the invasion of T2 toxin.one of the cytotoxicity mechanisms of T2 toxin is to induce cells to produce lipid peroxidation, resveratrol and acetylated derivatives have antioxidant capacity.The morphology of HepG2 cells under the effect of T2 toxin is observed by phase contrast inverted microscope.Normal HepG2 cells are fusiform and polygonal,cells grow adhere to the wall and are close;After the effect of T2 toxin on HepG2 cells for 48h,suspension cells increase,HepG2 cells shrink and the separation among cells increase.Thio barbituric acid(TBA) method and ferric thiocyanate(FTC) method are useed to compare resveratrol and its acetyl derivatives inhibiting lipid peroxidantion of oil.Results show that resveratrol and its acetyl derivatives can inhibit the oxidation of fat.The scavenging effect of resveratrol and its acetyl derivatives on superoxide anion radical was detected by the pyrogallol autoxidation method.The resveratrol and its acetyl derivatives can scavenge superoxide anion radical,the clearance rate of the 100μg/ml resveratrol is 85.4%.
