Biogenic amines is worldwide recognized as as potentially harmful to human health substances of biogenic amines in food. Microbial amino acid decarboxylase catalytic amino acid decarboxylation to produce widely present in the protein-rich aquatic products and their products. Research of some scholars at home and abroad show that the standard of aquatic products excessive levels of biogenic amines (FDA) has become the worldwide potential food safety problems. For aquatic products food safety problems caused by biogenic amines, carried out the following two aspects.1. Establish a multi-component aquatic products of biogenic amines in ultra-high performance liquid chromatography (UPLC)-post-column derivatization-UV detection, measurement methods, analysis of biogenic amines in seafood safety. Aquatic products meat organization’s extraction use freeze centrifuge solution by high chlorine acid, sodium hydroxide, saturated sodium bicarbonate and Dan sulfo-chloride is used to derivative glycosylated.Ammonia water makes the reaction over, acetonitrile is used to constant volume.The results:8of the Bas in0.5~20μg/mL has the good linear relationship, related coefficient (r) is equal or greater than0.999;8biogenic amines at0.21.0and2.0μg/mL concentration level, adding recovery is71.45%~94.83%, the coefficients of variation is1.96%-12.38%(n=6); According to three times the signal-to-noise ratio calculation,8species of biogenic amine detect limit:Try Phe is15.0μg/kg Put Cad His is6.0μg/kg Try Spd Spmis20.0μg/kg. This method’s reproducibility is good, simple and rapid, high accuracy,the results are accurate and can be used as test biogenic amines content of effective methods.2. Select the four kinds of aquatic eel, turtle, Chinese mitten crab and amblycephala to study ultra-fast and efficient UPLC platform, the system studied the impact of different storage temperatures on the content of biogenic amines in four aquatic products. The study looked at4℃,12℃and25℃, the relationship of the biogenic amine content and storage time, objective analysis and assessment of the relevance of biogenic amines and aquatic quality combined with specific corruption indicators volatile basic nitrogen (TVB-N) in order to determine its freshness indicators to provide a theoretical basis to improve the security of the four quality of aquatic products. Water products were analyzed on four kinds of aquatic products, meat tissue amino acids, biogenic amine precursor amino acid content and the relationship between the accumulation of biogenic amines, higher amino acid content of the precursors of biogenic amines in fresh meat tissue is also more.
