Dietary fiber (DF), which has many physiological functions, has always attracted attention in recentyears, and linseed meal is rich in dietary fiber content, it is good raw material for extraction of dietary fiber.But linseed meal has been mainly used as animal feed, and its output value is not improved. This paperstudied detoxification process for linseed meal contains cyanogenic glycosides, and then took enzymatic,microbial fermentation to research the process conditions of linseed meal dietary fiber extraction,determined and compared some physical and chemical properties of linseed meal dietary fiber extracted bydifferent method. The main results are as follows:(1) The effects of boiled method for linseed meal detoxification is studied, single factor andorthogonal experimental design determined the optimal method of detoxification process of linseed mealboiled: virus-free temperature was80°C, virus-free time was120min, solid-liquid ratio was1:10, underthese conditions cyanide content of linseed meal was14.85mg/kg.(2) The craft conditions of enzymatic extraction of linseed meal dietary fiber is studied, single factorand response surface methodology determined the optimal process: hydrolysis temperature was56°C,hydrolysis time was4h, solid-liquid ratio was1:20, the amount of enzyme was10560U/g. Under theseconditions, the dietary fiber content was68.12%, and the extraction rate was70.21%.(3) The craft conditions of microbial fermentation extraction of flaxseed meal dietary fiber is studied,single factor and response surface methodology determined the optimal process:1) The amount of lactic acid bacteria was6.2%, inoculated fermentation time was25h, fermentationtemperature was37°C, and the dietary fiber content was63.20%, the extraction rate was65.24%.2) The amount of mucor was13.1%, inoculated fermentation time was124h, fermentation temperaturewas28°C, and the linseed meal dietary fiber content was61.21%, the extraction rate was62.89%.(4) Compared the physical and chemical properties of these three linseed meal dietary fiber samples.The results showed that all of them had water holding capacity, water binding capacity, the expansion force,cation exchange capacity, fat binding ability, comprehensive comparison showed that flaxseed meal dietaryfiber fermented with lactic acid bacteria was optimal, water holding capacity was4.73g/g, bindinghydraulic was5.4g/g, the expansion force was5.32mL/g, the cation exchange capacity was0.71mmol/g,unsaturated fat binding capacity was2.47g/g, the saturated fat binding capacity was3.75g/g.The study provided a theoretical basis for the further development of linseed meal and the productionof linseed meal dietary fiber.
