Phytosterol (PS), a group of important bioactive compounds, in the framework belongs to the onlighted cyclopentane hydrophenanthrene.They can effectivly restrain body bowel to cholesterol absorption. But the fields of application are restrained fo-r its weak solubility (insolvable in water and the low solubility in oil). In order to improve its water-solubility and wide its application prospect, this paper used a me-thod to prepare the inclusion compound of phytosterol and β-cyclodextrin (β-CD) a-nd2-hydroxypropyl-β-cyclodextrin (HP-β-CD).And evaluating the influences about ser-um lipid indexes of mice of hyperlipidemia of phytosterol which were included by β-cyclodextrin and its derivative. Whether or not the formation of inclusion complex was influence the reducing blood lipids of phytosterol was discussed. The main res-ults were as follows:Quantitative analysis method for phytosterol had been contained. Using a spectro photometric method of phosphorus-sulfur-ferric to measure the contents of phytosterol. Using the absorption value of the β-sitosterol standard solution vs concentration to plot and getting the regression equation:A=7.9613C-0.0014, and the coefficient of correlation was0.9996(R=0.9996). The correlative curve linearity was all right when the concentration was from Omg/mL-0.1mg/mL.Inclusion compounds of PS/β-CD and PS/HP-β-CD were prepared.The inclusion compound of PS/β-CD and PS/HP-β-CD were produced by staturated solution method. The best preparation technology conditions for PS/β-CD were those:the molar ratio of phytosterol to P-CD was4:1,the reaction temperature was40℃,and the time of produce was5h.The inclusion ratio of phytosterol was84.05%,the percentage composition was13.69%; The best preparation technology conditions for PS/HP-β-CD were that:the molar ratio of phytosterol to HP-β-CD was4:1,the concertration of phytosterol was0.5%,and the reaction temperature was50℃.The inclusion ratio of phytosterol was95.53%,the content of composition was16.57%.The inclusion complexes were investigated by differential scanning calorimetry(DSC) and fourier transform infrared spectrum(FTIR) and ultraviolet-visible absorption spectroscopy(UV) and thin layer chromatography(TLC).At the same times,compared with the corresponding physical mixtures, results indicated that there were obvious differences between the inclusion complexes and the physical mixtures.Formation for the inclusion compounds were triumphantly proved.The water-solubility of inclusion complexes were to be measured.The water-solubility of phytosterol was increased from0.002mg-mL-1to0.045mg-mL-1and0.466mg-mL-1when it was included by β-CD and HP-β-CD, and keeping the inclusion complexes comparing with their corresponding physical mixtures, it was found that the solubility was increased by more than1.6times and2.5times,respectively.The paper has firsrly evaluated the influence of phytosterol that was inclusion by β-cyclodextrin and2-hydroxypropyl-β-cyclodextrin to serum lipid indexes of mice of hyperlipidemia.lt was found that phytosterol could signifcantly reduce the levels of TC and LDL-C, increase HDL-C,and it has had no influences on phytosterol which was included by β-CD or HP-β-CD.A kind of soymilk beverage was compounded with some stabilizers and emulsifier, inclusion compounds of PS/β-CD and PS/HP-β-CD were applied in beverage.The beverages were made successfully and stayed them under the normal temperature.Two weeks later, and on the whole the samples had better stability.
