Monascus, the important industrial filamentous fungi, is considered to be a mine for food and drugs exploitation. For the growth of fungi, blue light, oxygen and citric acid are important environmental factors, playing an important role in regulating the biological formation and secondary metabolites. In order to study blue light, oxygen and citric acid on Monascus morphology, secondary metabolite citrinin formation and its regulatory mechanism, this paper carried out and completed the following work.By the liquid fermentation, the author studied the effect of blue light on the production of biomass and citrinin in Monascus15-1, the data showed that bule light could inhibit the growth and stimulate synthesis value of citrinin. Using the citrinin content under blue light cultivation, was47.0%-fold more than that under dark cultivation. By stduy of different bule light intensity effect on citrinin production in Monascus15-1, results showed that:60lx-180lx blue light on the role of citrinin synthesis are stimulated, bule light intensity of a larger trend of increasing stimulation. By the solid fermentation,,ungder blue light culture colony spreads fast, edge of the mycelium-intensive, messy.The author studied the effects of oxygen on biomass and citrinin production in Monascus15-1, the data showed that poor oxygen conditions increased biomass in Monascus, larger than dynamic culture, By the solid fermentation,, hypoxia colony is thin, spreads fast, edge of the mycelium intensiveThe author also studied the effects of citric acid on biomass and citrinin production in Monascus15-1, the data showed that citric acid and lactic acid adjusting pH could corresponded to stimulate cell culture growth, inhibited citrinin synthesis. Citric acid is not involved in citrinin synthesis way. Citric acid on the synthesis of citrinin has some regulatory role.Meanwhile, citrinin degradation mechanism was discussed:in vitro, blue light illumination had a strong photodegradation to citrinin; in vivo, blue light could stimulate the synthesis of superoxide dismutase and catalase, regulation of superoxide dismutase and superoxide anion radical balance On later stage of fermentation, Blue light culture has high superoxide dismutase activity, H2O2accumulation, the rapid degradation of citrinin.
