In the present study, the development of corn germ meal is described. For this purpose, an effort is made to extract protein from corn germ meal which was got during corn oil processing using enzyme.The content of this study is as follows:1.The effects of particle size on the protein extraction during extracting potein from corn germ meal using multi-enzymes. Protein extraction rate increases correlated to extent of fragmentation. Protein extraction will be hard when the particle size is above200mesh. The optimal particle size is200mesh.2.The effects of pretreatment on the protein extraction during extracting potein from corn germ meal using multi-enzymes. Optimal conditions is30℃,30h,pH43.The optimal pretreatment condition is:pH:4.9,reaction time:40h,reaction temperature:50℃4. Optimization conditions of the protein extraction during extracting potein from corn germ meal using multi-enzymes.The enzyme addition dosage:2%, reaction time:30h, pH4.5, reaction temperature:50℃.5.Treatment with corn germ meal passing200mesh:(1).pretreatment with citrate buffer solution.(2). Liquefaction with a-amlyse.(3). Saccharification with glucoamylase.(4). Extraction with multi-hydrolase.(5).Ajusting PH4.2to precipitate using HC1.(6). Separation to get solid product containing50.8%potein.Protein recovery51.1%,sugar in supernatete27.33g6. Optimal conditions by alkali-extraction and acid-precipitation, is:pH9.0, time90min,50℃, solid liquid ratio1:12, acid precipitation pH4.2,protein recovery48.4%.7.Comparation alkali-extraction and acid-precipitation with enzymatic extracted. Alkali-extraction and acid-precipitation is simple but can produce mass sewage. The superiority of multi-enzymes method is high protein recovery and the supernatant can be further utilized in spite of high cost.
