Since the beginning of the21st century, the increasingly rapid socialdevelopment, people’s living standards continue to improve. The research is focuson the technology of high temperature flash pasteurization, discussing theapplication in craft beer industry in China, aims to get more advanced factoryproduction of sterilization and more fresh and tasty beer. This topic has made adetailed research on the application of high temperature flash pasteurizationtechnology, which cans mainly divides into three parts, the content and the resultsare as follows:1. We have made a brief introduction about two main pasteurization—hightemperature flash pasteurization and pasteurization, and introduce the mechanismof high temperature flash pasteurization and made a comparison withpasteurization. The result shows that: for the safety of products, the pasteurizationis safer than high temperature flash pasteurization, because the former environmentis closed, which can reduce the risk of pollution. But, for quality of beer and savingenergy, high temperature flash pasteurization display much moreadvantage—Thanks to the less heat treatment, lower PU value, we can obtain morefresh and tasty beer through high temperature flash pasteurization. Moreover,20000bottles of640ml/h product, for example, it can reducing steaming consumeabout70%, water about90%, electric power about30kW. And there is almost nowine loss and broken bottles.2. In this section, we have study the influence of high temperature flashpasteurization in beer. For the routine target of beer, foam durability, the ratio ofalcohol to ester, the beer through high temperature flash pasteurization plays moreexcellent than that in traditional pasteurization; for the quality guarantee period,there are long shelf-life on beers treated by high temperature flash pasteurization.As to sensory evaluation, the finished beer used by high temperature flashpasteurization retains more flavor substances and better tasting.3. The experiment analysis the possibility of the new sterilization applies incraft beer industry in China. In addition, we determined the optimum technologyparameter in high temperature flash pasteurization:72℃,30s and PU value is 26.69.Then,we discussed the second spoilage projecting, CIP, continuity andstability of production, etc. Above the research, we have drawn a conclusion thathigh temperature flash pasteurization is extremely suitable for craft beer industry inChina.
