This research studies on optimizing N, C source, in the process of fermentation inoculationquantity, fermentation time of three kinds of edible fungus fermentation medium of Pleurotuseryngii, ganoderma lucidum and cordyceps militaris, used orthogonal test to optimize thesuitable fermentation conditions for three kinds of edible fungi for industrial production. The100L air-lift fermenter was used in underbrush amplification test. Then, the testing systemwas set up for the functional materials in three types of liquor of mycelia fungus fermentationproduct. Using the in vitro and in vivo test to detect antioxidant, antitumor, protect liver,anti-aging ability of the slurry freeze-dried of three kinds of edible fungus fermentationmedium. It laid the foundation that developing a new type of edible mushrooms health drink.The main research results are as follows:1. Establish the optimum conditions of the liquid fermentation and after-treatment process:(1) Pleurotus eryngii growth medium: glucose20g/L, soy protein powder8g/L.fermentation time132h, inoculation amount of7%. Dry weight of mycelium up to limit15.49g/L. The flow processor amount of colloid mill is3L/min. The pressure of highpressure homogenizer is40Mpa.(2) Ganoderma lucidum growth medium: glucose20g/L, soy protein powder8g/L,fermentation time132h, inoculation amount of7%. Dry weight of mycelium up to limit15.21g/L. The flow processor amount of colloid mill is3L/min. the pressure of high pressurehomogenizer is40Mpa.(3) Cordyceps militaris growth medium: glucose20g/L, soy protein powder8g/L,inoculation quantity5%, fermentation time96h. Dry weight of mycelium up to limit17.32g/L. the flow processor amount of colloid mill is3L/min. The pressure of high pressurehomogenizer is50Mpa.(4) It worked out an edible mushrooms health drink formula which is suitable for publicthrough Orthogonal Test: fermentation liquor magma30%, cane sugar4%, malic acid0.03%,citric acid0.03%, sodium citrate0.03%, sodium alginate acid0.05%, xanthan gum0.04%. 2. The fermentation products of three types of edible mushrooms to make freeze-dried powderby freeze drying technique, then, the crude fiber, edible fungi polysaccharide, flavonoid,microelement and the content of cordycepin in cordyceps militaris were detected in the threekingds of freeze-dried powders. As result, the fermentation products of three types of ediblemushrooms liquor are rich in active ingredients. Fermentation liquor of pleurotus eryngiicontain0.79mg/mL crude fibre,479.59μg/mL polysaccharide,227.93μg/mL generalflavones,358.13μg/mL triterpenes; Fermentation liquor of lucid ganoderma contain1.60mg/mL crude fibre,462.72μg/mL polysaccharide,69.01μg/mL general flavones,713.85μg/mL triterpenes; Fermentation liquor of cordyceps militaris contain1.66mg/mL crude fibre,991.11μg/mL polysaccharide,97.83μg/mL general flavones,363.33μg/mL triterpenes,303.9μg/mL cordycepin. The fermentation products of three types of edible mushroomsliquor is rich in microelement, moreover, the harmful ion like Cd、Pb、As and other heavymetal content is far below the national standard.3. Using the DPPH radical scavenging test and MTT test verified the anti-oxidation andanti-tumor effect of freeze-dried powder of three kinds of edible fungus. Freeze-dried powderfrom pleurotus eryngii has the strongest cleaning effect to DPPH radicals: Clearance Ratereaches69.31%under16mg/mL. Freeze-dried powder from cordyceps militaris has the bestinbibitional effect to human BGC, Clearance Rate reaches97.34%.4. It verified that the freeze-dried powder which was the product of three types of ediblemushrooms fermentation has recovery function for white mouse acute liver injury resultedfrom CCl4.Lucid ganoderma works best.5. It verified that the three types of edible mushrooms fermentation products have excellentanti-ageing function, it can improve the SOD and GSH-px energy in blood and liver tissue ofwhite mouse, decreasing the content of MDA (P<0.05) so that play a part in resisting ageingresulted from D-galactose.6. Acute toxicity test shows that freeze-dried powder which was the product of three types ofedible mushrooms fermentation is safe and nontoxic.
