Prunus mume Sieb. et Zucc. belongs to Rosaceae, the fruit of which was rich in nutrients, with excellent function and utilization of health-care value. This paper was undertaken to analyze the effects of different solvents on the antibacterial activity of Japanese apricot fruit, and the antibacterial activities of the extract of Japanese apricot fruit against Escherichia coli (E. coli), Bacillus subtilis (B. Subtilis), Streptococcus suis (S. suis), scab, Botryosphaeria dothidea (Moug.) Ces. et De Not, Colletotrichum fragariae Brooks, Phytophthora capsici Leonian, Fusarium solani (Mart.) Sacc, Fusarium graminearum Schwl, and A549; the antibacterial activities of different cultivars of Japanese apricot fruit were analyzed, and in the experiment we found that there were some differences. The active components in presence of Japanese apricot fruit were determined by HPLC and the correlation of active components and antibacterial activity was analyzed; the antibacterial activities and the active components of different Japanese apricot wine were studied and therefore, an important recommendation for developing deep-processing products of Japanese apricot fruit was offered.1. The effects of solvents on the anticancer activities of Japanese extract were investigated and two kinds of antibacterial activity determination methods were compared. The antibacterial activities of different solvent extracts of Japanese apricot fruit was different and the inhibition activity of the extract extracted with n-hexane showed the best, acetone was better. The inhibition activity of the extract extracted with different extraction methods and from the two cultivars was not significant. Compared with K-B paper dispersion method, MIC was more accurate to determine the antibacterial activity and smaller to outside interference.2. The antifungal activities of different cultivars of Japanese apricot fruit against three kinds of bacteria and six kinds of plant phytopathogenic fungi, and the result showed that: the antibacterial activities of different cultivars of Japanese apricot extract against three kinds of bacteria were different, but with no significant differences; and the antifungal activities against six plant phytopathogenic fungi were also different, and that of some cultivars were significantly different.3. The contents of organic acids in different cultivars of fruits of Japanese apricot were evaluated by reverse-phase HPLC and a kind of active substance was isolated from the extract of Japanese apricot fruit by AKTA two-dimensional liquid chromatography. The result showed that all the nine kinds of organic acids were in presence of the extracts of Japanese apricot fruit and the contents in different cultivars were different, the content of citric acid was the highest in all the nine kinds of organic acids.4. Study on the antibacterial activities of different years and different kinds of Japanese apricot wine against E. coli, B. subtilis, and S. suis. The results showed that the antibacterial activities of different kinds of Japanese apricot wine were different; the antibacterial activity and organic acid content of the same kind of Japanese apricot wine increased with years.5. The inhibitory effects of Japanese apricot extract and Japanese apricot wine on the A549cell line were analyzed by CCK-8. Both of the extract of Japanese apricot fruit and the Japanese apricot wine could inhibit the growth of A549, the anticancer activity of the extract of Japanese apricot fruit significantly inhibited growth of A459cell in a dose-dependent manner. But the trend of Japanese apricot wine was different, the low concentration of Japanese apricot wine could promote the growth of A549cell and the high concentration inhibited the growth.
