Purposes:In the food industry,people usually add synthetic antioxidants to achievelonger shelf life,but due to improper use or itself may do harm to food safety,to researchnatural antioxidants to replace synthetic antioxidants becomes the trend of the foodindustry. Leaves and barks of Eucommia ulmoides Oliv.(EUO)have the same in activecomponents.EUO leaves extract contain a variety of active components, such aspolyphenols,flavones,chlorogenic acid,which has obvious antioxidant effect. EUO leaveshave a lot of production and rich source,so it has potential advantage to produceantioxidants. This experiment using the extract of EUO leaves added to oil,to study theirimpact on the oil oxidation.Methods:This experiment used ethanol-ultrasonic extraction method from EUOleaves,and then extracted crude product by petroleum ether,chloroform and n-butanol,determine the content of Polyphenols,flavonoids and chlorogenic acid. Extract added torapeseed oil,then observe effects on oil peroxide value (POV)and acid value(AV)atroom temperature. Get the extraction phase which has the best antioxidant effect.To furtherstudy the antioxidant effects of the extraction at room temperature(≈28℃)and55℃,lightconditions,adding concentrations and add antioxidant synergist(citric acid,VC)inrapeseed oil. Comparison with BHA,is synthetic antioxidants,research the antioxidanteffect on EUO leaves.Results:(1)Polyphenols was48.72%,flavones was10.40%,chlorogenic acid was7.28%in n-butanol extract. Polyphenols was25.96%,flavones was5.19%,chlorogenicacid was19.67%in water phase. The chloroform extracts of the three components wereless.(2)N-butanol extract was the best antioxidant effect on rapeseed oil.(3)0.05%n-butanol extract effectively inhibited POV and AV of rapeseed oil atroom temperature(≈28℃)and55℃.(4)N-butanol extract slow down ultraviolet light induced oil oxidation.(5)Antioxidant synergist(VC and citric acid)enhanced the antioxidant effect ofn-butanol extract.(6)Antioxidant effect of0.05%n-butanol extract was similar to BHA.Conclusion:The results indicated that n-butanol extract of EUO leaves was verygood antioxidant effect, so n-butanol extract of EUO leaves is a kind of naturalantioxidants in oil.
