Aquatic products are very popular because they are rich in protein, salts and vitamins. They contain a variety of trace elements. These elements are introduced from food, water, and the contents of these elements are closely related to human health. With the physiological role of the elements deeply rooted among the people, the research of elements in aquatic products has also been paid increasingly attention to. The distribution of inorganic elements and different forms of iodine in aquatic products were studied in this paper.In chapter1, classification and pre-treatment methods of aquatic products, analysis methods of elements in aquatic products, etc., were introducted. Also, research progresses on elements in aquatic products were reviewed.In chapter2, the fabrication of conventional concentric nebulizer with a demountable capillary for inductively coupled plasma mass spectrometry was developed. Excelent performances were proved by series of experiments. The nebulizer was used through the whole study and satisfactory results were got.In chapter3, contet of41elements in64aquatic samples and7other samples were got by AAS and ICP-MS.In chapter4, distribution of metals in the tissues of aquatic animals and differentiation of metal content among various species of aquatic products were thoroughly dicussed on the basis of the data in Chapter3.In chapter5, speciation analysis for iodine was studied. IO3-and I-were separated within3min by RP-HPLC-ICP-MS, with trimethylamine used as the ion-pair reagent and sodium thiosulfate as the eluant.The study of aquatic products indicates that the contents of elements in aquatic products were related to the waters they lived in and food sources. Either different types or different parts of aquatic products could lead to different element contents. Elemental speciation analysis is necessary, and requires further study.
