Persistent Organic Pollutants are a synthesis compounds which from the food chain accumulation and have harmful chemicals to human health. This paper is based on the test of the content of PCBs、organochlorine pesticides by GC, to test the content of POPs from seafood and the risk assessment of human health. Test and assessment the seafood’s quality and safety which from Xiameng areas to hunman health.Obtain the following main results:1、Use the internal standard method to test the residues of PCBs of in 70.5%~ 119% of the rath of recovery;use the external standard method to test the residues of organochlorine pesticides the in 70.2%~100% of the rath of recovery and in 0.007%~9.97% of the relative standard deviation.From the results,the rath of recoveryd and the relative standard deviation are in the standard range.The method have good parallel and stability,the percision is also high.2、The range about the contents of PCBs from Xiameng areas are 0 to 49.8μg/kg. The detection rate of fish are 0 to 49.8μg/kg, the detection rate of Shrimp are 0.03 to 1.38μ.g/kg, the detection rate of crab are 0.66 to 19.64μg/kg, the detection rate of shellfish are 0 tol8.39μg/kg;the average value of PCBs from fish, Shrimp,crab,shellfish are 3.34 μg/kg、0.71 μg/kg、2.79 μg/kg.2.94μg/kg. The toxicity residues of seafood from Xiameng areas is 1.1×10-5 μg WHO-TEQ·kg-1 in the qualfifed and low risk range, people of Xiameng areas use the seafood of the exposure residues of PCBs is 0.0023 μg/kg·d,the value is less than the regulation value which is 0.2μg/kg-d.The carcinogenic index of PCBs is 2.0 × 10-6mg/kg·d and the regulation value is 1.0×10-4 which can take a risk of carcinogenic,the low residues of CBs they intake, the health assessment they have.3、The range about the residues of organochlorine pesticides from Xiameng areas are0.05 to 86.1μg/kg, The detection rate of fish are 0.55 to 57.22μg/kg, the detection rate of Shrimp are 0.09 to 7.81μg/kg, the detection rate of crab are 1.90 to 56.19μg/kg,the detection rate of shellfish are 0.05 to 86.07μg/kg, the average value of organochlorine pesticides from fish, Shrimp,crab,shellfish are 8.48 μg/kg、3.58 μg/kg、 15.11 μg/kg,5.08 μg/kg.People of Xiameng areas use the seafood of the exposure residues of HCHs is 2.92 μg/kg-d, the exposure residues of DDT is 3.18 μg/kg·d, they are less than the regulation value which are 80μg/kg·d and 50μg/kg·d. The risk of carcinogenic of HCHs and DDTs are less than 1, index of uncarcinogenic of HCHs and DDTs in xiameng are 0.04 and 0.06,the low residues they intake,the health assessment they have.
