In china meat is a major source of nutrition in people’s lives.As people’s living standards improve,People daily diet requirements are also increased.Meat become a daily consumption structure important part.In recent years with the rapid growth in the consumption of all kinds of meat,food safety continues to issue that direct harm to people’s health.Have a bad influence on people’s daily life,meat quality has been unprecedented attention.And the WHC is one of the important indexes that affect pork quality.At the same time the WHC determine the quality of meat production and processing of weight loss as well as processed products.There are about 30 kinds of methods capable of measuring muscle water holding capacity,and our general method of measuring the WHC is pressure method.This study focuses on the correlation between the stress relaxation properties of fresh pork and the WHC of muscle measured by the pressure method.In order to find a quick and easy method of determination the water holding capacity.In this paper, a new pig slaughter before the trough, pork loin, after the leather strap on flanks of horse for sample material.The stress relaxation property test was carried out by using the texture meter to obtain the stress relaxation test.To obtain rheological parameters of the various parts of the sample material that based on generalized Maxwell rheological model with nonlinear fitting analysis. Using principal component regression method to analysis the rheological properties and the WHC parameters data, obtain the relationship between water holding capacity and its texture traits.The regression equation(R2>0.90) is significance for the prediction and rapid determination of the water holding capacity.Based on correlation research between the water holding capacity of fresh pork and the stress relaxation, this paper focuses on the design of the water holding capacity intelligent measuring Instrument. Intelligent measuning instrument adopting electrome chanical integration technology, using worm gear and single screw machine drive system, stepper motor power system, and the sensor and MCU control system etc.The instrument operation is convenient, has realized the automation and high efficiency determination of the water holding capacity of muscle.The followings are the main completed research contents:(1)The water holding capacity and stress relaxation tests of fresh pork.Auto matization and high efficiency determination of the water holding capacity of muscle. Use compression test, conventional pressure method to measure the water holding capacity test and stress relaxation tests to study the mechanics of pork the rheological properties,and extract the parameters of the indexes that can reflect the physical characteristics of meat quality indicators.Including: hydraulic, relaxation modulus, relaxation time, etc; Build a relatively complete mechanical characteristic parameters that can roundly study on the characteristics of pork from the perspective of a more comprehensive.(2)Study on the correlation between the water holding capacity and stress relaxation of fresh porkThrough the analysis of the experimental research and data processing, this paper mainly discusses the correlation between the stress relaxation properties of fresh pork and measured water holding capacity of muscle by pressure method. For fresh pork water holding capacity put forward a new way of thinking. For the determination of fresh pork water holding capacity to explore a rapid and convenient method.(3)Department of the smart meter design measured for water holding capacity.The research based on the above experiment, this paper also designed the water holding capacity intelligent measuring instrument. Traditional detection is high labor intensity, low efficiency, big artificial error. At present, our country the detection accuracy of fresh meat water holding capacity is low, especially the efficiency, the detection level of mechanization and automation is relatively backward. This design to solve this problem, an improvement in the detection on the basis of the traditional, so as to improve the efficiency of detection.
