Several industrial wine active dry yeast has been selected in this study. The study include tolerance, authenticate and fermentation performance of the yeasts. First, the21 kinds of industrial yeast are detached and observed by microscope for a preliminary identification. Second, complete molecular identification of isolated yeast has been distinguished by 5.8S-ITS gene segment. The mainly species include Saccharomyces cerevisiae、Cryptocococcus flavescens、Saccharomyces bayanus、Hanseniaspora uvarum by identification. At last, the 21 kinds of yeast were made to test the physiological characteristics, including glucose test, the ethanol tolerance test,temperature test and SO2 tolerance test. The test found the yeast SC’s sugar and ethanol tolerance is strong. The yeast VR 5, the yeast ES488 and the yeast F have good capacity of ethanol tolerance. The yeast ES488 has best capacity of high temperature tolerance. The yeast R-HST, the yeast ES488, the yeast U43 and the yeast ICV have good capacity of SO2 tolerance. The yeast F, the yeast LSM, the yeast D47,the yeast TOP15, the yeast SC, the yeast FC9 and the yeast F33 stable performance,have good capacity of fermentation, start fast, product alcohol fruitful.
