Currently,there are many methods of the vegetable oil quality testing studies while most of the methods are independent or the research of vegetable oil is about a special index. In this subject, the optical and electrical characteristics of vegetable oil were studied. Though improving experimental methods to detect the conductivity of the aqueous phase, the dielectric constant and the intensity of the reflected light of vegetable oil. The processing and analysis system of the photoelectric and the data was designed about vegetable oil using C # software and the data of edible vegetable oil about light and electrical was analyzed.The method of accelerated oxidation of edible vegetable oil was improved and was used to measure the conductivity of the water phase; The core of the detection system was the chip that the name is MSP430F5529. The data acquisition system of the vegetable oil dielectric constant was designed with the core, the signal conditioning circuit and the filter circuit. The data rapid transfer was achieved between the micro-controller and PC with USB communication. The optics system of experiments was designed for detecting the reflected light intensity of the vegetable oil and the data analysis system of the vegetable oil was designed for analyzing the data of the water phase conductivity, the dielectric constant and the ultraviolet reflection spectrum of the vegetable oil.The water phase of the vegetable oil conductivity values for data fitting and a derivative, it is the conductivity of the water phase about the poor oil that is higher than the qualified oil’s. The temperature and frequency as two variables of vegetable oil’s dielectric constant, three-dimensional map that vegetable oil dielectric constant change with the temperature and frequency is made.Compared with traditional analytical method, the trend of the dielectric constant of vegetable oil can be more intuitive with the changes about the frequency and temperature. The signals of three vegetable oil, water phase conductivity, dielectric constant and reflection spectra data are analyzed together. And try to determine the relationship among the three data of vegetable oil quality characteristics.
