Apple vinegar is a kind of deeply processed products, and since now there are many factories in China. As a kind of health care products, apple vinegar has been a new favorite. Drinking apple vinegar has gradually become a new fashion. The apple vinegar has long history in China. And it’s simply the same period as fruit wine, and it was recorded from Xia dynasty. With the continuous improvement of people’s living standard, the fruit vinegar health care function also gets more and more attentions, domestic are lifting boom of fruit vinegar. The researches of fruit vinegar strains, fruit vinegar process and fruit vinegar mixing are getting more and more favors of the researchers. Apples have higher moisture content and soluble solids content. It’s not only conducive to juice, and the sugar content is suitable for the growth of yeast, for the alcoholic and acetic fermentation. It becomes a good raw material of obtaining moderate proportion of acetic acid of fruit vinegar. In this paper, process instance using fresh apple as raw materials, processing into puree. Then through alcohol fermentation and acetic fermentation to made from apple cider vinegar. And it also talks about the processing technology and operation points of apple vinegar. This product retained more vitamins, dietary fiber, organic acids, etc. And it’s good for our health. This article mainly talks about fruit vinegar large-scale production technology, and the improvement of equipment selection. These parts improve the quality of products, reduce the cost of enterprise, save the energy and improve the economic efficiency. The constriction of industrial scale will promote the regional advantages of agricultural products and optimize the implementation of the layout. It can also promote the further development of agriculture, and rural economic structure adjustment. It can promote the industrialization of agriculture informatization development. And finally, it can improve the integrated agricultural productivity.
