Edible mushrooms can enrich metal elements, and they are rich in mineral and trace elements with high nutritional value. Meanwhile, they can absorb some kinds of metal elements to damage human health.There are no national standards or industry standards for analysis of trace elements in edible mushrooms at present. As common methods of elements in food, atomic fluorescence spectroscopy and atomic absorption spectroscopy are not suitable for simultaneous analysis of kinds of elements.This thesis has established microwave digestion-inductively coupled plasma mass spectrometry (ICP-MS) method for determination of trace elements in edible mushrooms. The study for optimization of methods of pretreatments, selection of isotopes, and experiment of eliminating interference were described. Validation parameters of the method were considered, including linearity of quantitative analysis, sensitivity, precision, accuracy, and recovery. The results showed that this method was accurate and reliable.ICP-MS had great advantages compared with other methods, such as fast, sensitive, good linearity scope, it could be application in setting limited standards of trace elements in edible mushrooms, and it provided technical support for risk assessment. This study has also afforded basic data and theoretical basis for research on nutritional value, medical value of edible mushrooms and artificial cultivation.
