Taking Mesona as the main material, analyzes the main components and extracts mesona glue. This glue will be applied to jelly poweder production. We will make sure this jelly powder process parameters and establish the qulity objective evaluation standard. We also research the jelly powder quality change rules in the process of storage and set up corresponding storage period prediction model.With the jelly glue extraction yield as index, We use atmospheric lye extraction, high pressure alkali extraction and ultrasonic extraction method. The result showes that the ultrasonic assisted extraction method has short time consumption, high extraction rate, the optimum extraction condition for the power of 400W, liquid material ratio 1:20, lye concentration is 0.4%, extraction time 40min, Mesona glue carry rate achieved 39.98%.Taking the decoloring rate and polysaccharide loss rate as the index, choose activated carbon for decolorizing agent, make sure this glue extract best decoloring technology parameter for:activated carbon dosage is 2.5%, the temperature is 60℃, extracting time for 50min.With the glue drying rate and the solubility as the main index, we inspected blast drying and vacuum freeze drying method on drying effect, and chosed the vacuum freeze drying method, and determined this glue drying process parameters:precool temperature -20℃, precool time 6h; Sublimation drying temperature55℃, working pressure0.03Mpa; Analytical drying temperature 65℃; The whole drying process time 24h.This jelly powder formula:this glue 1%, konjac gum 11%, sugar 80%, citric acid 2% and potassium chloride 1%, citric acid 1%. The jelly powder applied effect research, measured the indicators of this jelly for:PH3.26, soluble solid content is 9.5%, the content of this adhesive is 25.34 mg/g, gel strength is 0.332 kg, elasticity was 0.467 and chewiness is 0.280, the water is 94.42%, in line with the GB19983-2005 jelly standards.To color for index, select the option (-a*)/b* as the color value to study the change rule of this forecast jelly powder storage life. Research results show that the composite beverages main agent, color index change is first order reaction.
