Spray drying system is not only one of the most important link in dairy production, but also a great influence in the quality of products. Because of the complexity of this system, there has been no comprehensive study of the whole system, the conclusion is not very comprehensive by selecting a part of the whole system, from the point of view of controlling the operating conditions of the whole spray drying system, the study of the whole system is still needed.This topic mainly take the larger infant formula for research, selecting the moisture content, the total number of microbe colonies and vitamin A loss totally three indicators as the research objects, which has a great influence on the product quality, and carry on it from four systems : high-pressure pump system, wind system, drying tower system and fluidized bed system. Each system select three main factors: High pressure pump system select the material of the opening of the preheating temperature, high pressure pump and high pressure pipeline pressure as study factors. The wind system select fine powder recovery temperature, star valve air cooling temperature and opening of the exhaust fan as study factors. Drying tower system select the inlet air temperature, exhaust temperature and fixed fluidized bed temperature as study factors. Fluidized bed system select the inlet air amount, hot air temperature and cold air temperature as the study factors.For each system, through collecting the data that the changes of three factors affect the product index and under the help of the Design Expert V8.0 software which take the index as response values,designing the influence surface experiment of three factors and levels, analyzing the data by the response surface method indicate the function equation between factors and index, and the trend that factors affect the index. The conclusion is as follows:Study on high pressure pump system indicate: high pressure pipeline pressure has the largest influence on the moisture of the product and total microbial colony, less effect on the loss rate of vitamin A. The opening of the high pressure pump has a greater influence on the loss rate for vitamin A.The study of the wind system indicate: the opening of the middle fan has the greatest influence of moisture content, powder recovery temperature has the greatest influence on the total number of colonies, star valve air cooling temperature has the largest influence on the loss rate of vitamin A.Study of the drying tower system indicate, fixed bed temperature’s influence on the loss rate of water content and vitamin A is the greatest, inlet air temperature has the biggest influence of the total on microbial colony, the influence of exhaust temperature on the three is the smaller.Studies on fluidized bed systems indicate: fluidized bed air cooling temperature on the moisture content and the effect of vitamin A loss is the largest, the biggest influence on total number of colonies is the inlet wind amount. Hot air temperature on the influence of the three is small.The corresponding function model based on the research of the four systems can provide a theoretical reference for the actual production of enterprise.
