Evaporation and concentration equipment was essential process equipment for the production of milk powder. Most dairy industry used multi-effect evaporator with heat pump (steam ejector) in China, the research on the other dairy evaporation equipment was less, Mechanical Vapor Recompression (MVR) evaporator had not been used. MVR evaporators were used in dairy industry was widely in the developed country, compared with other evaporator, achieved the effect of energy-saving and environmentalist. To the project of the first MVR evaporator in Shaanxi as an example, a single-effect MVR evaporator was designed applied to production of skim milk powder (10000kg/h).This paper designed the process and structures of evaporator systematically. According to the parameters of feed rate, through heat balance, material balance, we concluded that the total water evaporation capacity was about 6000kg/h; each evaporation of lkg water steam consumption was 0.24kg; the total power of electric motor is 150kW; consumption of cooling water was 16740kg/h. Tubular sterilizer used 77 pipes of Φ25x2mm, length 5000mm, the diameter of the sterilizer was 0.36m; the heating chamber used 197 pipes of Φ51×1.5mm, length 14000mm, the diameter of the chamber was 1.14m; separator used square interface, length 0.82m, width 0.41m, export used circular outlet which diameter was 0.51m, separator’s high was 3.28m, bottom diameter was 1.64m; surface condenser adopted 27 pipes of Φ25×2mm, length 4000mm, the condenser’s diameter was 0.22m. The calculation of energy consumption showed:the steam consumption and the cooling water consumption were saved by more than 20% and 60% compared with most used evaporators in China.Through smoothly solved problems during the commissioning process of MVR evaporators in Shaanxi, I had a deeper understanding of the MVR evaporator.
