Tricholoma matsutake is a kind of pure natural precious edible fungi,has been called "the king of mushrooms",Tricholoma matsutake tastes like abalone, lubrication and refreshing, In Japan matsutake is regarded as the "God mushroom".Tricholoma matsutake has high nutritional value and medicinal value. Modern medicine shows that The function of Tricholoma matsutake includes anti-aging, anti-cancer, enhancing immunity, in the treatment of diabetes and cardiovascular disease, and other functions, the value of Tricholoma matsutake has been the subject of attention at home and abroad, in foreign countries has been used for research and development of drugs, health care products and cosmetics. Although matsutake resources are abundant in China, higher quality, but in the market of our country to see products matsutake is still dominated by primary processed products, the product quality is low, poor sales. Therefore, reasonable and effective utilization of tricholomamatsutake resources in our country, with the development prospects of high value realization and reasonable development of Tricholoma matsutake.In this paper, the micro capsule technology and spray drying technology on the development process of Tricholoma matsutake, first on the active components of polysaccharides of Tricholoma matsutake extract, optimization of Tricholoma matsutake polysaccharides extraction technology; studies of spray drying technology for the preparation of polysaccharides of Tricholoma matsutake process and on the quality of evaluated; for the full price of Tricholoma matsutake were microencapsulated and determine the optimal process conditions; Determination of full price microcapsule products indicators.The main research contents and conclusions are as follows:1.In the Tricholoma matsutake polysaccharides extraction test, first of all through the single factor experiment study on enzyme(pectinase and papain and cellulase) addition, extraction time, extraction temperature, extraction p H factors on polysaccharide extraction rate influence, using quadratic general rotation combination design optimization of Tricholoma matsutake polysaccharide extraction process conditions for enzyme(pectinase and papain and cellulase) dosage is 2.0%, enzymatic hydrolysis temperature is 40℃, enzymolysis time 80 min, enzymatic hydrolysis p H 4.5, get the yield of Polysaccharide from an average of 6.73%.2.In the spray drying method,by optimizing test of Tricholoma matsutake microcapsule emulsion polysaccharides, first by single factor experiment. The effects of concentration of polysaccharide, monoglyceride fat content, proportion of wall materials, homogenization pressure, homogenization time five factors to package buried rate and yield as the index to the effect of,through the single factor variance select shadow ring is a significant three factor.In the three factors and three levels test, through the orthogonal experiment design and variance results conclude that monoglyceride dosage is 0.3%, the proportion of wall materials for 2:1, homogenization pressure for 20 MPa, polysaccharide concentration 20mg/ml, homogenization time 2min,embedding rate and yield optimal results are excellent. The polysaccharides of Tricholoma matsutake microcapsule quality assessment test, verify that the prepared microcapsule has good quality matsutake.3.In the full Tricholoma matsutake spray drying micro capsule technology research, a comprehensive study of the proportion of wall materials, core material proportion of wall materials, solid content, inlet air temperature, into the air, they affect the embedding rate, use Mintab software to the selected factor,through six factors three level test, to determine the significant factors, by Plackett Burman experiment results conclude: wall material ratio, the air volume and the feed rate,three factors of micro capsule embedding rate had a significant effect. Using response surface methodology for the optimization and obtain the best package buried conditions: proportion of wall materials for 1:6.15,air volume for 29m3/h, feed rate 249.46 m L/h, at this time of Tricholoma matsutake microcapsule embedding rate is 87.91%. According to the best process conditions for the three repeated validation test, obtained 88.74%, and the predicted value is like the trueth.4.The sensory properties of Tricholoma matsutake micro capsule were measured by color, appearance, dissolution, taste and flavor to value Tricholoma matsutake microencapsulated objectively,The Tricholoma matsutake microcapsule’s moisture content, density, grain size, solubility properties were determined, and all the indicators of prepared microcapsule products are useful stored for a long time. Using SEM morphology to observe microcapsules of Tricholoma matsutake, the vast majority of particle surface is smooth, and continuous with no cracks,the core material of microcapsule products can isolate the external environment, to avoid the interference of the external environment, the package of core material buried is effective.The study compared matsutake micro capsule and mushroom powder stability found: Tricholoma matsutake micro capsule is conducive to protect nutritional ingredients stability.
