China is an agricultural country with large population. Food is an important issue to people of China and even to people of the world. The use of pesticides provides a guarantee to the production increasing of crops, but also poses a threat to people’s health and the sustainable development of ecological environment. Food safety problems caused by pesticide residue has aroused more and more attention, thus it is of important significance to protecting people health and ensuring economy sustainable development if we can strengthen the detection, research and control of pesticide residues in food, look for ways for more rapid detection of pesticide residues, and improve the accuracy of detection. In this study, three-dimensional fluorescence spectroscopy was used to detect two kinds of pesticide standards, which are carbofuran and carbendazim. The main contents are as follows:Firstly, the generation principle and the relevant parameters of fluorescence, the influenced factors of fluorescence intensity, and characteristics and research status the of three-dimensional fluorescence spectroscopy to detect pesticide residues were reviewed.Carbofuran of different concentrations in acetonitrile, methanol(AR) and methanol(HPLC grade) organic solvent were detected by three-dimensional fluorescence spectra, respectively. The corresponding three-dimensional fluorescence spectra were obtained. According to the positions of fluorescence peak and changes of intensity of fluorescence peak, the corresponding fluorescence characteristics was analyzed, then carbofuran working curve of different solvents was drawn. The more suitable organic solvents for the detection of pesticide residues was obtained after comparative analysis.Secondly, the principles of Rayleigh scattering and Raman scattering were briefly introduced, and several correcting methods of three-dimensional fluorescence spectra were listed. The three-dimensional fluorescence spectra of carbendazim solution were corrected by blank correction method, and the three-dimensional fluorescence spectra before and after correction were analyzed. Finally, dimensionality reduction of the corrected three-dimensional fluorescencedata of carbendazim solution was made to obtain more comprehensive and intuitive image.
