In this paper, the effect of glow discharge plasma on the degradation of T-2 toxin and patulin in aqueous solution was studied at the condition of different initial concentration, acidities and catalysts. Besides, the degradation kinetic curves, kinetic models and the optimum process conditions of degradating toxins were evaluated. Secondly, the degradation of patulin in Fuji apple juice was researched. Taking degrading voltage, processing time and initial concentration of patulin as factors, the single factor test and the orthogonal design experiment were carried out to make the higest degraded efficiency of patulin in apple juice. Finally, in order to seek an efficient method for degradation of patulin in apple juice with the quality of apple juice maintained as well as possible, the impact of glow discharge plasma treatment on the apple juice quality(cv. Fuji and Red Banana) were analysed. The results showed as:1. The glow discharge plasma was a kind of effective degradation method and could rapidly and effectively degrade T-2 toxin and patulin in aqueous solution. With the initial concentration of toxin increasing, the degradation rates were evidently elevated. Different acidities also played an important role, because the matrix of weak acid and base was likely to influence the content of·OH generated by GDP. Fe2+ and hydrogen peroxide had catalytic effects on degradation, but nano-zinc oxide showed inhibition effects on degradation of toxin. The dynamics equation curve fitted well and belonged to the first order kinetics reaction. Besides, The values of pH in the degraded solution were rapidly decreased due to the carboxylic acids formed, then the values increased because carboxylic acids was decomposed into CO2 and H2 O. The concentration of T-2 toxin degraded solution was negatively correlated with germination rate of seed, but positively correlated with growth inhibition rate of germ. Therefore, it explained that GDP technology could effectively eliminate the toxicity of T-2 toxin.2. The patulin in apple juice could be completely degraded by glow discharge plasma. The degradation rate of patulin was considerably affected(p<0.05)and the value was 96.63% at 5 min of the treatment time. Based on single factor and orthogonal array design experiments, the influence degree of various factors followed the descending orders of voltage > treatment time > initial concentration of patulin. Besides, The study showed that the optimal experimental conditions were voltage at 550 V, treatment time at 3 min, initial concentration of toxin at 7 mg·L-1, respectively.3. GDP treatment had no remarkable effect on the overall physical and chemical indicators of apple juice(cv. Fuji and Red Banana), but had some impact on the total phenol, flavonoids and flavonols.Within 0 to 10 min of the treatment time, the soluble solid concentration, the total acid content, pH, viscosity, conductivity, A660 and A420 of apple juice had no remarkable change. The flavonoids and flavonols content also changed little. With the treatment time of GDP increasing, the flavonoids and flavonols increased. As to the total phenol, its content noticeably increased. Based on a comprehensive consideration, patulin would be decreased to a lower level after treatment by glow discharge plasma for 10 min, and the main chemical and physical indexes of export apple juice could not be affected as well.
