Glucosamine (G-NH2), a kind of natural amino monosaccharides,is the final product ofthe chitin hydrolysis. The properties of reduction capability, scaveng DPPH radical andhydroxyl radicals of G-NH2were identified. G-NH2possesses a good oxidation resistance.The effect of G-NH2on tyrosinase activity and the inhibition mechanism of G-NH2totyrosinase were explored. G-NH2inhibition on tyrosinase was a complex process,the enzymereaction was increased before decreasing.The experimental resvlts showed that G-NH2is amixed inhibitor.In addition, it is a irreversible inhibition.B16-F10melanoma cells was used as a model in order to assess the development ofG-NH2as a whitening agent. The effects of G-NH2to B16-F10cells in morphology,cytotoxicity, tyrosinase activity and the melanin synthesis were studied. The resvlts showedthat G-NH2changed the cell morphology of B16-F10, which is not in favour of transfer ofmelanin. On the basis of proliferation inhibition rate of B16-F10, it suggested the toxicity ofG-NH2is smaller than KA. G-NH2covld inhibit the activity of intracellvlar tyrosinase,andthe effects is stronger than the KA. The amount of melanin synthesis showed a curve, whichwas decreasing before increased.G-NH2possesses antioxidant effect, which covld remove the free radicals in shrimpbody to inhibit the activity of tyrosinase. The resvlt showed that G-NH2covld effectivelyprevent the shrimp blackening. By inhibiting the bacterial proliferation,G-NH2covld preventfleshy damage. That was evidence that G-NH2possesses a good preservation effect. In theinvestigation of G-NH2on common aquacvlture bacteria, the resvlts showed that the effectsof inhibition was weak, so it is unfit for bacteria control in aquacvlture.
