The thesis explores their effect on fruit quality, ethylene emission, respiration intensity, cell wall content, pectinase activity, malondiadehyde content and enzyme activity relating with fruit softening through the study of1-MCP and Cacl2. It regards wild actinidia arguta as test materials, revolves about physiological property of actinidia arguta—it’s easy to be softened when its fruit is ripe, and aims at the change of peculiar enzyme and cell wall structure arousing fruit softening. According to these researches, these conclusions are made:1)1-MCP disposition obviously defers the increase of actinidia arguta’s solude solids content, the descent of titratable acidity content, and the declining speed of fruit firmness.1-MCP disposition restrains the breath peak of actinidia arguta and delays the peak time of rising ethylene. It also restrains the degradation of peckin, cellulose and hemicellulose, reduces the activated peak of its polygalacturonase and defers the appearance time of activated peak of its β-galactosidase.1-MCP disposition delays the appearance of peak of peroxidase and superoxide dismutase activity, and reduces the malondiablehyde content during the storage beginning period of actinidia arguta fruit. Therefore,1-MCP disposition obviously defers the softening of actinidia arguta fruit.2) Cacl2disposition defers the increase of actinidia arguta’s soluble solids content, the descent of titratable acidity content and the speed of fruit firmness, cuts down the respiration rate and accelerates ethylene production, restrains starch degradation and α-amylase activity. In the whole process of storage, Cacl2disposition controls pectin ethylene activity add defers the function of cell wall (pectin, cellulose, hemicellulose), which has a positive effect on keeping fruit quality and increasing storage time.1-MCP and CaCl2disposition aiming at effect the study of actinidia arguta fruit’s physiology and biochemistry index and forming softening mechanism in the Changbai Mountain area offers basic data to the storage, process, and transit of actinidia arguta fruit and a theoretical basis for the exploitation and usage of resources in the Changbai Mountain area. The development and utilization of actinidia arguta resources have a vital significance on transforming resources advantages into economic advantages, keeping variety of fruit, increasing farmers’income and accelerating the development of local economy.
